This Simple Chicken Chili recipe is not only delicious but SO easy! A one-pot meal that can be thrown in the crock pot or be ready in under 30 minutes on the stovetop.

Great, flavorful chili doesn’t have to be complicated!  My Chicken Chili is as easy as opening cans and is SO delicious.   You can cook it overnight in the crock pot or put everything in a large pot and have dinner ready in just about 30 minutes.

Here’s how to make Simple Chicken Chili:

  • If you’re using a rotisserie chicken or chicken breasts, shred the cooked chicken and add it to either the crock pot or a large soup pot.
  • Add 1-2 cans of diced tomatoes.  I like to blend my tomatoes a little with an immersion blender before adding them but you can definitely leave them chunky as well.
  • Drain 2 cans of Northern beans and add them to the pot along with 16 oz of your favorite salsa.
  • Add 1-2 cans of chicken broth depending on how thick or thin you like your chili.
  • Dice up 8 oz of Monterey Jack cheese and add them to the pot.  If you are using a crock pot, wait until the soup is almost done to add the cheese.  If you’re cooking the chili in a pot, go ahead and add the cheese at this point.
  • You can also add 1/4 cup of diced onion if you’d like at this point.
  • Once the cheese has melted, the chili is ready!  Serve with crackers, Fritos, shredded cheese, sour cream, and any other of your favorite chili toppings.

Ingredients
  

  • 2 cans of chicken, a rotisserie chicken, or 2 cooked chicken breas
  • 16 Oz Your favorite salsa
  • 1-2 Cans diced tomatoes, blended for a less chunky chili
  • 2 10.5 oz cans of Northern beans, drained
  • 1 Can chicken broth
  • 8 Oz Monterey Jack cheese, cubed
  • 1/4 Cup Chopped onion - optional

Instructions
 

  • If cooking in a pot, add chicken, diced tomatoes, salsa, beans, onion (if using) and broth to a large soup pot. Cook for 15-20 minutes and then add the diced cheese. Season with salt & pepper.
  • If using a crock pot, add all ingredients except the cheese and cook on low setting for 6 hours or overnight. A few minutes before serving, add the diced cheese. Season with salt & pepper.
