Southwest Chicken Wrap

My Southwest Chicken Wrap is a quick, delicious, summer lunch or dinner.  Roasted chicken, bacon, cheese, tomatoes, and avocado wrapped up in a tortilla with the most addictive homemade southwest sauce.  Whether you’re spending your summer at the lake, the beach, or the neighborhood pool, this quick & easy wrap will become a family summer favorite! 

My girls and I have spent a lot of time at the beach this summer trying to soak in every moment before my oldest leaves for college.  One of our favorite beach spots in Cocoa Beach has an amazing blackened chicken wrap that we all love.  So I tried to recreate it for a lunch on the beach last week and – wow – it was SO delicious!!  It was so good my daughters asked for it again a few days later!  If you’re looking for a beach meal everyone will love, you’ve got to try this Southwest Chicken Wrap.

I love these wraps because they are just as perfect for a quick summer lunch as they are for an easy weeknight dinner.  They are loaded with roasted chicken, bacon, shredded cheese, chopped tomatoes, and avocados and then drizzled with the MOST amazing Southwest Sauce.

If you are a meal prepper, these Southwest Chicken Wraps are perfect – cook the chicken ahead of time, chop up the tomatoes and avocados, mix up the sauce and let everyone build their own wrap whenever they’re hungry.

Here’s how I make my Southwest Chicken Wraps

Ingredients: 

  • 2 cups of cooked chicken (see note for my seasoning suggestion or use rotisserie chicken)
  • 2 slices of cooked bacon
  • 1 cup of shredded mexican cheese
  • A handful of cherry tomatoes, diced
  • Diced avocado
  • One large tortilla or wrap

 

Southwest Sauce

  • 3 parts mayo
  • 1 part adobo sauce (more if you like it spicy)

 

Instructions: 

  1. Chop up all the ingredients – the chicken breasts, bacon, tomatoes and avocado.  Add to a bowl and stir to combine.
  2. Mix up the Southwest Sauce.
  3. Lay your tortilla or wrap on the counter and spread the sauce down the center of the wrap.  Top it with the chicken mixture and roll up like a burrito.
  4. Optional:  Put it in a skillet with a little butter to brown all sides and melt the cheese!

Note on chicken: You can use rotisserie chicken in these wraps but I love to dice up raw chicken breasts, coast them with my own seasoning mix and quickly cook the chicken in a hot skillet.  For the seasoning mix, I’d sprinkle the chicken with a good coating of chili powder, cumin, garlic powder, a sprinkle of cayenne and salt and pepper.

Make It Your Own

These wraps are easy to customize with whatever you have on hand.  I knew I wanted to copy the wrap from the restaurant so used the same ingredients they use but you can customize it however you want.  Here are a few ideas:

  • Throw in some black beans, corn or jalapeno for a spicy version.
  • Season chicken with Italian seasoning and mix with bacon and cheese.  Sub out the Southwest Sauce for ranch for a classic Chicken Club Wrap.
  • Make it vegetarian and add more veggies with the delicious Southwest Sauce.

 

Katie’s Tip

The homemade Southwest Sauce is really what makes these wraps SO delicious! I usually make a double batch because it’s just as good as a salad dressing, a spread for a burger or chicken sandwich or a dip for french fries or veggies.
