It’s Memorial Day weekend and that means the official time to dust off the grill for the summer and the most amazing Memorial Day Menu. This is my menu for appetizers, main courses, and side dishes that are sure to have everyone asking “can you send me that recipe?”Â
Tomorrow is Memorial Day which, to me, always signifies the official beginning of summer!  We’re at the beach this week for our annual Memorial Day trip so I need easy, delicious, no-hassle recipes that will make everyone happy. AND won’t keep me in the kitchen cooking all day. For summer parties or cookouts, I always start with some delicious sides and then decide what main protein would be the best for the meal. For the beach in summer, its an easy decision – something full of flavor that my husband can throw on the grill while I finish things in the kitchen.
Here is my Memorial Day Menu:
Appetizers: Burrata with Roasted Tomatoes and Grilled Artichokes

Everyone needs something delicious to snack on while the meal is being prepped and prepared.
Burrata with Roasted Tomatoes and crispy french bread is the perfect appetizer! Fancy enough for the adults
but simple enough for little hands to grab bread on their way to the pool or beach.
Grilled Artichokes
If you’ve never tried Grilled Artichokes, PLEASE do me a favor and try these!! I know artichokes are one of
those things that seem intimidating to cook, but I promise this is a super easy recipe and oh SO delicious! Grilled Artichokes
are probably one of my favorite summer snacks or apps.
Main Course: Chicken & Steak Kabobs and BBQ Chicken
Chicken & Steak Kabobs

Simple, EASY and always a kid favorite! Kabobs are the perfect summer food. I love to make some with just chicken,
some with just steak, and some with a combo of both. You can keep the veggies on separate skewers for picky eaters
and let everyone choose what they prefer.
BBQ Chicken
BBQ Chicken is just a classic summer recipe! I use a dry rub on the chicken and then put it on the grill with a
simple BBQ sauce as a glaze. It comes out perfectly delicious every time! And in the middle of winter when
you’re wishing for a summer meal, you can also make this an oven BBQ Chicken recipe that is JUST as good!
Sides: Southern Broccoli Salad, Mac & Cheese and Parmesan Potatoes
Southern Broccoli Salad
My mom’s Southern Broccoli Salad might be one of my all-time, very favorite summer recipes!
It always reminds me of lake or beach days when she would make a big bowl and we’d snack off it throughout
the weekend. I think even the pickiest of eaters will really love this no-oven recipe – crunchy broccoli,
BACON, cheddar cheese, and a little onion (optional) all in a sweet, tangy dressing.
Mac & Cheese
I tried not to include this is my Memorial Day Menu but my girls always ask for it anytime we’re making
a big, celebratory meal! This Mac & Cheese is a traditional southern recipe that is not only easy but will
likely become your family’s favorite mac and cheese recipe.  Ritz cracker topping….need I really say more??
Parmesan Potatoes
Once you try this simple potato recipe, I don’t think you’ll ever want another kind of potato!
With just 3 ingredients, this easy recipe will become a family favorite for sure. This is one of those recipes that will
surprise you – and you’ll want to share it with everyone you know!
