Onion Soup Mix Pot Roast

Onion Soup Mix Pot Roast was one of my favorite recipes that my mom made when we were growing up.  The kitchen always smelled amazing as it was cooking and the meat, potatoes, and carrots were all SO tender.   It might not be the definition of a cheesy, fatty comfort food but it was the ultimate comfort food to me!  

How is it possible that recipes and foods can just take you back to your childhood so easily??  I would love to actually know the science behind how food is such a form of nostalgia.  I think that’s why I love cooking so much – its a hobby that easily transports me back to being a kid or being at my grandmother’s or a perfect holiday meal.   I hope our girls remember certain recipes as they are growing up that just reminds them of home like this one does for me.

Onion Soup Mix Pot Roast is one of the easiest and most delicious meals!  It takes about 10 minutes of attention and a warm oven – that’s it!  You can easily make this recipe in a crock pot if you prefer.  I’ve done it in the crock pot and in the oven and both taste just as good.  I usually use the oven method because it takes about 2 1/2 hours as opposed to all day in the crock pot.   Whichever way you make it, it will come out delicious every time!

How to make Onion Soup Mix Pot Roast

  • You’ll need the following:
    • a chuck roast
    • one envelope of onion soup mix
    • a few peeled potatoes
    • a handful or two of baby carrots
    • salt, pepper, and olive oil
  • Preheat your oven to 350 degrees or turn your crock pot to high.
  • Regardless of which method you are using, browning the meat first makes all the difference.  In a large Dutch oven or skillet, pour about 2 tbsp of olive oil.  Let it heat up over medium/high heat.  While the pot is heating, salt and pepper the roast.
  • Once the pot is hot, add the roast to the pan and let it brown on each side for about 4-5 minutes.
  • After it has browned, sprinkle the roast with the onion soup mix (if using a crock pot, transfer the roast to the crock pot and then sprinkle it with the soup mix).
  • Nestle the potatoes and carrots around the roast and drizzle with a small amount of olive oil.
    • If using the crock pot, you can add a little water (1/4 of a cup) or beef broth into the crock pot as well.  Cover it and let it cook for 5-6 hours.
  • Cover the pot with a tight-fitting lid and put it in the 350 degree oven for 2 1/2 hours.
  • After 2 1/2 hours, check to see if the meat pulls apart with a fork.  If it does, its ready!  If it doesn’t, let it cook another 20-30 minutes and check it again.  The potatoes and carrots will be nice and soft.

Ingredients
  

  • 1 chuck roast
  • 4-5 small potatoes or 2-3 medium potatoes, peeled and chopped into big chunks
  • 1 cup baby carrots (more if desired)
  • 1 envelope onion soup mix
  • salt & pepper
  • olive oil

Instructions
 

  • Preheat the oven to 350.
  • Heat a large Dutch oven with a tight-fitting lid over medium/hight heat. Drizzle 2 tbsp of olive oil into the pot.
  • While the pot is heating up, salt and pepper both sides of your roast.
  • Add the roast to the pot and let it brown on each side 4-5 minutes.
  • Once it has browned, sprinkle the onion soup mix on top of the roast and nestle the potatoes and carrots around the roast. Drizzle the potatoes and carrots with a little olive oil.
  • Cover the pot tightly and transfer to the oven. Cook for 2 1/2 hours or until the meat easily shreds with a fork.

If using a crock pot:

  • Brown the roast in a skillet and transfer to the crock pot. Sprinkle with the onion soup mix and add 1/4 of a cup of water or beef broth to the bottom of the crock pot. Nestle the potatoes and carrots around the roast and let it cook on high for 5-6 hours or until the meat easily shreds with a fork.
