Savory Breakfast Sandwiches

These Savory Breakfast Sandwiches are a hearty, delicious way to start the day! Filled with scrambled eggs, melted cheese, and crispy bacon. Make these ahead of time and freeze to bring out for a busy week.

Ingredients
  

  • 4 English muffins, halved
  • 4 eggs
  • 1/4 cup milk
  • 4 slices of cheddar cheese
  • 6-7 slices of cooked bacon
  • butter
  • salt & pepper

Instructions
 

  • Place the English muffins on a baking sheet and toast in a toaster, oven, or toaster oven.
  • As your English muffins are cooking, break 4 eggs into a bowl. Add 1/4 cup of milk and whisk well until the mixture is bubbly.
  • Add butter to a small skillet over medium heat. Once the pan is hot, add the egg mixture to the pan. Season with salt & pepper and cook until the eggs are done to the consistency you prefer.
  • Add a slice of cheese to one side of each of the English muffins. Top with scrambled eggs and cooked bacon. Top with the other half of the English muffin. Enjoy!

I love an easy, affordable recipe you can make ahead of time and enjoy all week.  My Savory Breakfast Sandwiches are perfect to make ahead of time, freeze, and thaw whenever you have a busy week coming up.  With only 4 ingredients, these breakfast sandwiches are ready in about 10 minutes and can be customized with whatever ingredients your family loves.  Wrap them up individually for a great grab-and-go breakfast option!

Here’s how to make Savory Breakfast Sandwiches:

Ingredients:

  • 4 English muffins, split and toasted
  • 4 large eggs
  • 4 slices of cheddar or your favorite cheese
  • 4 slices of cooked bacon or sausage patties
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • Optional toppings: sliced tomatoes, avocado, spinach, hot sauce

Instructions:

  1. Crack eggs in a medium sized bowl.  Add 1/4 cup of milk to the egg and whisk until well mixed.  Season the eggs with salt and pepper.   Cook in a skillet over medium heat until cooked to the consistency you prefer. 
  2. While the eggs are cooking, place a slice of cheese on the bottom half of each toasted English muffin.
  3. Once the eggs are ready, place eggs on top of the cheese on each English muffin.
  4. Add bacon (or sausage patty) on top of the eggs and top with the other half of the English muffin.

Optional Tips: 

  • Customize your breakfast sandwich with other items like mushrooms, sauteed onions, avocado, or different cheese.
  • For a healthier option, use turkey sausage or bacon and egg whites.
