Blackened Chicken Alfredo

My Blackened Chicken Alfredo is the perfect meal for a busy weeknight but delicious enough to serve to any dinner guest!  Creamy alfredo sauce plus blackened chicken makes this 15 minute meal a family favorite. 

Blackened Chicken Alfredo

My Blackened Chicken Alfredo is creamy, a little spicy, and ready in just 15 minutes. It's the perfect weeknight family meal!

Ingredients
  

  • 1 lb chicken breasts
  • 2 tbsp blackened seasoning
  • 1 lb fettuccine noodles
  • 1 jar your favorite Alfredo sauce
  • 2 cloves of minced garlic
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tbsp butter
  • salt & pepper
  • olive oil

Instructions
 

  • Bring a large pot of water to a boil. Add a large handful of salt to the water. When it is boiling, cook the pasta as according to the package directions.
  • While the water is boiling, sprinkle both sides of your chicken breast with blackened seasoning.
  • Heat a large skillet to medium/high heat. Add 1 1/2 tbsp of olive oil to the pan. Add the minced garlic and stir so it doesn't burn. When you can smell the garlic cooking, add the chicken breasts to the pan and cook on both sides for 2-3 minutes or until browned.
  • When the chicken has browned, remove it from the heat and set aside.
  • Turn the heat down and add 1 tbsp of butter to the pan. Add half a jar of the alfredo sauce and season with Italian seasoning. When the noodles are done cooking, slowly add them to the pan with the alfredo sauce, coating all of the noodles as you go.
    *You don't even have to drain the noodles. A little pasta water makes this even better!
  • When all the noodles are coated, slice the chicken and add it to the pan. Serve in a large platter and top the pasta with grated parm before serving.

Blackened Chicken Alfredo is a perfect meal for busy weeknights when you just don’t have more than 20 minutes to spend on dinner.  While I love a homemade alfredo sauce, some nights I just don’t have time.  For this recipe, I used a jar of Kroger brand Garlic Alfredo Sauce – it cost. me about $2 and no one will ever know the difference once I add a few seasonings and spices.  This recipe is a prime example of cooking smarter, not harder so dinner gets on the table fast!

How to Make Blackened Chicken Alfredo:

Ingredients:

  • 1 lb chicken breasts or cutlets
  • 1 box of fettuccine
  • 1 jar of alfredo sauce
  • 2 cloves of garlic, minced
  • 2 TBSP of butter
  • Italian seasoning
  • Blackened seasoning
  • Grated parmesan cheese

Instructions: 

  1. Bring a pot of water to a boil and cook the fettuccine as the box instructs.
  2. Season both sides of your chicken with blackened seasoning.
  3. Heat a large skillet over medium heat.  Add 1 TBSP of butter and cook the chicken for about 3 minutes on each side or until browned and cooked through. Set aside.
  4. In the same skillet, add the other TBSP of butter and the minced garlic.  Cook until the garlic is fragrant and then carefully add the alfredo sauce and turn the heat to low.
  5. Seasoning the sauce with a TBSP of Italian seasoning and some black pepper.
  6. When the pasta is done, carefully add it to the skillet, coating it in the sauce.  Add 1/4 cup of grated parm to the sauce and stir.
  7. Slice the chicken and add it to the skillet as well.  *If you’d like it to look pretty, go ahead and transfer the pasta to a serving dish and add the sliced chicken on top.
  8. Sprinkle each serving with a little more parm and enjoy!

 

How to elevate store-bought sauces:

  • Aromatics: Add garlic, chopped onion or mushrooms for extra flavor.
  • Spices: Season with garlic, basil, oregano or red pepper flakes.  Just be careful adding salt as most store-bought sauces are already pretty salty.
  • Protein:  Simply seasoned protein adds so much flavor to a meal using store-bought sauce!  Use your favorite protein and get tons of flavor.
