Cajun Chicken Pasta

Cajun Chicken Pasta is a spicy, delicious pasta dish with crispy chicken and vegetables in a cheesy creamy sauce.  You can adjust the seasoning to make it as spicy or mild as you prefer.   This is a great recipe for a Sunday dinner or dinner party! 

Cajun seasoning is one of my absolute favorite seasonings!  I love sprinkling it on chicken for a cajun chicken sandwich or using it to flavor and spice up a cream sauce like in this recipe.  The flavors of the cajun spice, creamy sauce, and salty grated Parmesan cheese is the perfect sauce combination.  Add some veggies and a little crispy chicken to the top and you have a delicious, family-friendly meal everyone will love!

Here’s how to make Cajun Chicken Pasta: 

  • Step 1:
    • Dredge your thinly cut chicken breasts in the milk/egg mixture and then in the breadcrumb/flour mixture.  Heat up a large skillet over medium/high heat with enough oil to barely cover the bottom of the pan.  Once the pan is hot, add your breaded chicken and cook until crispy and cooked through (165 degrees).
    • Remove from pan and set aside.
  • Step 2:
    • Fill a large pot of water halfway with water and place it over high heat to bring to a boil for the pasta. Once it is boiling, cook the pasta according to the package instructions.
  • Step 3:
    • In the same pan you used for the chicken, add the mushrooms and sliced red peppers.  Sprinkle with salt & pepper. Cook until soft.
    • Once the vegetables are soft, add the heavy cream, Parmesan cheese, Cajun seasoning, and adobo sauce.  Bring to a slow bubble and let the sauce thicken.
  • Step 4:
    • When the pasta is finished cooking, use a slotted spoon to add the pasta to the cream and vegetable sauce.  Add as much pasta as you prefer.
  • Step 5:
    • Slice the chicken into strips.
    • Pour the cream/pasta mixture onto a large pasta bowl or platter and add the sliced chicken to the top.  Top the entire dish with a little freshly grated Parmesan cheese.

      Ingredients
        

      • 3 chicken breasts
      • 1 lb pasta like bowtie or penne
      • 1 cup breadcrumbs
      • 1/4 cup all-purpose flour
      • 1/2 tbsp paprika
      • 1/2 tsp garlic powder
      • 1/2 tsp Lawry's seasoning salt
      • 6 oz sliced mushrooms
      • 1 red bell pepper, thinly sliced
      • 2 cups heavy cream
      • 1/4 cup grated Parmesan cheese
      • 1 tbsp Cajun seasoning
      • 1 tsp adobo sauce (more if you like it extra spicy)
      • olive oil

      Instructions
       

      For the chicken:

      • Slice chicken breasts in half lengthwise so you have 2 thinner pieces of chicken.
      • In a large plate or dish, combine the flour, breadcrumbs, paprika, Lawry's, and garlic powder. In another shallow bowl, mix together one egg and a small amount (tbsp of so) of milk or water.
      • Dip each piece of chicken in the egg and then coat it in the breadcrumb mixture. Make sure all sides of the chicken are coated.
      • Heat a large skillet over medium/high heat. Add enough oil to just cover the bottom of the pan. Add the chicken, making sure not to crowd the pan. You may have to do 2 batches. Cook the chicken through (to 165 degrees), remove from pan and put to the side.

      For the pasta and sauce:

      • Fill a large pot with water and heat over high heat until boiling. Add one good handful of salt to the pot while it is heating up. Once it is boiling, cook the pasta according to the directions on the package.
      • In the small skillet you used for the chicken, add a tbsp of olive oil and the mushrooms and red bell pepper slices. Sprinkle with salt and pepper. Cook until the vegetables begin to soften.
      • Once the vegetables are softened, add the heavy cream, cajun seasoning, adobo sauce (if using), and parmesan cheese. Leave the heat on medium/high heat until it begins to bubble. Season with a sprinkle of salt & pepper.
      • When the pasta is cooked, use a slotted spoon to transfer the pasta to the cream/vegetable mixture. Don't worry about draining it completely - a little pasta water will help thicken the sauce.
      • When the sauce has thickened, transfer the pasta and sauce to a large pasta bowl or platter. Slice the chicken and place it on top of the pasta. Sprinkle with grated Parmesan cheese. Enjoy!
