Chicken Caesar Wrap

When I’m trying to come up with interesting lunches that will keep me from going out and grabbing fast food, a wrap is always my go-to.  I used to live in this little apartment community called Post Riverside and they made fresh wraps and sandwiches every day.  My favorite was their Chicken Caesar Wrap.  It was a perfectly seasoned and dressed caesar salad inside a grilled wrap.   I’ve tried to recreate it here.  And this might be one of the easiest lunches – I used store bought Caesar dressing, bagged lettuce, and had already cooked the chicken – so it all came together in about 10 minutes.  I put a piece of provolone cheese inside the wrap before grilling because why not – everything is better with cheese!

How to make this Chicken Caesar Wrap:

This is SUCH an easy recipe – especially if you already have your chicken cooked and ready to go.  Here’s what to do:

  1. Chop your pre-cooked chicken.  If you need to cook your chicken, add the chicken to a baking dish, drizzle with olive oil, salt and pepper (or a seasoned salt if you have one you love) and cook for 20 minutes at 350 degrees.
  2. In a small bowl, mix together 1-1 1/2 cups of Romaine lettuce with some shredded Parmesan cheese and the cut up chicken.
  3. Top the salad mixture with your favorite store-bought Caesar dressing.
  4. Lay the wrap on a flat surface.  Take a piece of provolone cheese and cut it in half.  Put both pieces of cheese down the middle of the wrap.  Top the cheese with the salad mixture.
  5. To roll, tuck in the sides of the wrap, pull one of the ends over and roll the wrap over on itself.
  6. Heat a small skillet over medium heat with a little butter or oil.  Once its heated, add your wrap to the pan and cook on each side until browned.  I usually cover my pan while its cooking so the cheese will melt faster.
  7. Your delicious wrap is ready to go!

Ingredients
  

  • 1 chicken breast, cooked and cut into cubes
  • 1 1/2 cups romaine lettuce, chopped
  • 1/4 cup shredded Parmesan cheese
  • 2 tbsp your favorite Caesar dressing
  • 1 slice provolone cheese
  • 1 wrap
  • butter or oil for the pan

Instructions
 

  • Cut cooked chicken into cubes. Mix chicken, lettuce, and cheese together in a bowl.
  • Add dressing spoonful at a time, stirring, until you get the amount you prefer.
  • Lay a wrap on a flat surface. Take your slice of cheese and cut it in half. Place the cheese slices in the center of the wrap. Top the center of the wrap (and the cheese) with your salad mixture. Fold the sides of the wrap in and hold them while you overlap with one end of the wrap. Roll the wrap over itself.

  • Heat a small skillet over medium heat and add a pat of butter or a little oil to the pan. Once it is hot, place the wrap seam side down in the pan. Cook until slightly browned. Flip the wrap over and cook the other side. When browned, remove from pan, cut in half, and enjoy!
