Ingredients
  

  • 4 slices of Italian Mountain bread or any fresh-baked bread you prefer
  • 2 ripe tomatoes, sliced
  • 8 oz ricotta
  • 2-3 leaves of basil, roughly torn
  • 1 tbsp Italian seasoning
  • 1 clove of garlic, minced
  • 1 tbsp olive oil
  • salt & pepper

Instructions
 

  • Toast your bread in a toaster or in the oven on broil.
  • While the bread is toasting, in a small bowl mix 8 oz of ricotta with the Italian seasoning, garlic, olive oil, and salt and pepper. Stir well until the ricotta has a whipped consistency.
  • Slices tomatoes and roughy tear the basil leaves.
  • When the bread is toasted, spread the ricotta on top of the toast, top with the tomatoes, and fresh basil. Enjoy!

It’s almost time!!!   One of my favorite foods is about to be in-season!  I can’t get enough of ripe, beautiful tomatoes during the summer months.  I was raised on juicy tomato sandwiches – literally a slice of tomato, 2 slices of bread, mayonnaise, and salt and pepper.  A slice of a ripe tomato in the summer was often served as a vegetable side dish to accompany a main dish.  To me, there isn’t another ingredient that can be so delicious with simple salt and pepper and also be so complex in pastas, sauces, and meals.

Tomato Ricotta Toast is fresh and simple!  I use tomatoes in their simplest form with fresh basil and seasoning and the result is OH SO delicious!   Serve it for a perfect light lunch or breakfast or use smaller toasts for a delicious appetizer or snack.  I just use a spoon and a little olive oil to whip the seasoned ricotta before adding it to a crispy piece of bread.   Topped with a ripe tomato and fresh basil, it doesn’t get any simpler than this!
