Grilled Teriyaki Chicken and Pineapple Kebabs

Grilled Teriyaki Chicken and Pineapple Kebabs – nothing tastes more like summer to me!  I think it reminds me of being in Hawaii and eating the fresh-off-the-grill chicken, steak, and fresh pineapple that I loved so much.  If you’ve never grilled pineapple, give it a try.  It gets caramelized and is SO sweet and delicious!  I love kebabs because you can customize them with the veggies you prefer.  Here are some of my favorite things to add to kebabs.  

Optional kebab ingredients: 

  • Whole baby portobello mushrooms
  • Red pepper 
  • Chunks of onion
  • Zucchini
  • Cherry tomatoes
  • Fruit 

You can use a charcoal grill like a Big Green Egg or Kamado Joe or can cook them inside in an oven.  Either way, you’ll get delicious teriyaki chicken and pineapple kebabs full of flavor!

Ingredients
  

  • 1 lb of boneless chicken breasts cut into cubes
  • Onion cut into cubes
  • Pineapple pieces
  • Baby Portobello mushrooms
  • 1 - 1 1/2 cups of teriyaki sauce
  • 2 garlic cloves minced
  • 2 tbsp brown sugar
  • Salt and pepper

Instructions
 

  • Mix together the teriyaki, garlic, brown sugar, a good pinch of salt and some course black pepper in a large freezer bag. 
  • Add the chicken to the bag and marinate for 30 minute to 1 hour. 
  • Once the chicken is marinated, thread the chicken, veggies, and pineapple onto skewers.  Pour the remaining marinade over the skewers.  
  • Grill on medium heat until the chicken is cooked through and the veggies are browned.  Serve with rice or couscous.
