These Accidental Peanut Butter Cookies were made by my oldest daughter when her first recipe failed on her! They are absolutely delicious and a perfect sweet treat!Â
I am a bit OCD when it comes to cooking! I know my recipes and don’t like veering from them. I don’t like adding new ingredients or “zhuzhu-ing” it up (my husband is very good at it). Those attributes should make me a good baker…..but not so much.
My oldest daughter, however, is a great baker but is the exact opposite of me. The recipe says a cup, ehhh….throw in a cup in a half! While I love her free spirit, as you might guess, it makes me a little crazy in the kitchen sometimes!!
She decided the other night that she wanted to make peanut butter cookies.  She pulled out the ingredients she thought would be in peanut butter cookies and then asked how much of each she should add. I nicely told her to look up a recipe (isn’t that where most people start?!). So here she goes with a recipe she finds.  Halfway through the recipe, she realizes she doesn’t have enough sugar….so we google it and find that honey is a good substitute. We realized we had gone wrong when the cookies were WAY too wet and would not form into balls.  So…..she starts adding again (while I looked up another recipe).  She added a little flour, some baking powder, baking soda (measurements we got from a recipe), and butter.  To say I was a little uncertain of how they would come out was a BIG understatement!!
Somehow….with non-precise, throw-it-all-together-and-see-what-happens baking, my amazing daughter made some AMAZING cookies!!! I should never have doubted her!
How to make Accidental Peanut Butter Cookies (I wouldn’t suggest our willy-nilly method):
- Add the following ingredients to a large bowl:
- 1 cup of peanut butter
- 1/2 cup of sugar
- 1/3 cup of honey
- 1 1/4 cups of flour
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1 egg
- 1 stick of butter (slightly melted)
- Usually you would mix together the sugars and butter first…..but….as you might guess, we didn’t do it that way! So we just added everything together at once and they came out great.
- Using a hand mixer, mix all ingredients until well combined.
- Scoop out small balls and place on a cookie sheet.
- Cook at 375 for 10-12 minutes.
- They will come out a little gooey. LET THEM COOL SLIGHTLY BEFORE MOVING THEM! Once they’ve cooled off, move them onto a cooling rack for 20-30 minutes.
Accidental Peanut Butter Cookies
Made after a failed attempt, these Peanut Butter Cookies are absolutely delicious!! Make sure to let them cool after baking.Ingredients
- 1 cup smooth peanut butter
- 1/2 cup sugar
- 1/3 cup honey
- 1 1/4 cups all purpose flour
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1 egg
- 1 stick of butter, slightly soft
- Optional: chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Mix all ingredients together in a large bowl.
- Using a hand mixer, mix until well combined. If using chocolate chips, add after mixing and stir together gently.
- Scoop out into small balls onto a baking sheet.
- Cook the cookies for 10-12 minutes.
- Let them cool ON the baking sheet for 10 minutes before moving them to a baking rack.
