Ingredients
  

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup multi-colored carrots
  • 1 zucchini, cut into wedges
  • olive oil
  • salt & pepper

Instructions
 

  • Preheat oven to 400 degrees.
  • Cut the broccoli and cauliflower into smaller bite size pieces. Cut zucchini into wedges.
  • Put all vegetables on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Mix well so all vegetables are coated.
  • Bake for 20-25 minutes or until vegetables start to brown.
