Southern Biscuits and Gravy is a family favorite that has been tested many, many times through the years! I add crumbled breakfast sausage for the ultimate sausage gravy and spoon it over the fluffiest biscuits. It is a perfect weekend family breakfast!Â
Since I was little, biscuits and gravy has been my favorite breakfast! This recipe for my Southern Biscuits and Gravy has been passed down through many generations. My grandmother made the tiniest, fluffiest angel biscuits and her gravy was beyond good! Even though my dad couldn’t do much of anything in the kitchen, he knew how to make gravy and, since he loved it as much as I did, he was always willing to make it for me. I love making this recipe now because it just reminds me of my family and all the times spent in the kitchen with them.
When I make biscuits and gravy, I always make bacon first so I can use the bacon grease to make the gravy.  I love to cook my bacon in the oven. It is so much cleaner and you’ll still be left with enough grease. You can, of course, cook bacon in a skillet, reserve the grease and use it for your gravy if you prefer. To cook the bacon in the oven, preheat the oven to 400, lay the bacon out on a baking sheet and cook it for about 15-20 minutes depending on how hot your oven cooks.
You can definitely make this recipe without adding sausage and just have delicious gravy with biscuits but for breakfast, the sausage makes it so, so much better! I use this recipe without adding the sausage when I’m making gravy for other dishes like chicken fried steak, mashed potatoes, or over chicken and rice.
Here’s how I make my Southern Biscuits and Gravy:
- Step 1:Â Preheat the oven and get the biscuits cooking. I use frozen biscuits but make your own if you feel so inspired!
- Step 2: Heat a medium-sized skillet over medium heat and cook the sausage. Once it is cooked through, set it aside.
- Step 3: Using the same skillet, add bacon grease (you can also use any kind of oil if you aren’t making bacon) to the skillet. Add just enough grease to barely coat the bottom of the skillet.
- Step 4: Sprinkle all purpose flour over the oil, covering all of the oil. Whisk while you’re cooking so the flour doesn’t burn.
- Step 5: Once the flour has lightly browned and all of the oil has soaked into the flour, turn the heat down to low and slowly add the milk, whisking as you add to prevent clumps. Continue to stir as the gravy thickens.
- Step 6: Once the gravy has thickened, add the sausage back into the pan.
- Step 7: Season with salt, pepper, and a little dash of cayenne pepper. Stir and taste. Add more salt if needed.
- Step 8: Serve over biscuits.

Southern Biscuits and Gravy is a hearty, comfort food breakfast perfect for a weekend family breakfast!Ingredients
- 6 frozen biscuits, cooked
- 1/2 lb breakfast sausage
- 3 tbsp bacon grease or oil
- 3-4 tbsp all purpose flour
- 1 cup milk
- 1/4 tsp cayenne pepper
- salt & pepper
Instructions
- Cook biscuits as directed on package.
- Heat a medium-sized skillet over medium heat. Cook the sausage until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet over medium heat, add 3 tbps of bacon grease (or oil if using).
- Sprinkle the oil with 3-4 tbsp of all purpose flour. Use enough flour to cover the oil and whisk to combine. The consistency should be paste-like and thick.
- Turn the heat down to low and slowly add the milk while you're whisking, making sure to stir any clumps. Let it thicken for a couple of minutes.
- Once the gravy has thickened, add the crumbled sausage back to the gravy. Season with salt, pepper, and a little pinch of cayenne pepper. Serve over biscuits.
