Breakfast Burritos are a delicious, freezable breakfast that can be customized with your favorite ingredients!  These burritos have sausage, egg, and cheese wrapped in a flour tortilla and toasted in a pan with a little butter.  It’s the perfect start to a day! 

I rarely eat breakfast – I don’t know why but I’ve just never been a breakfast person.  I have to remind myself at noon or 1:00 to eat!  I know….its weird.  However, when I do eat breakfast, I want it to be a delicious savory breakfast….usually including some kind of cheese and breakfast meat.

I have become a fan of breakfast burritos because of the versatility of them.  You can make them as healthy as you want with egg whites, mozzarella, vegetables and a low carb wrap or the way I eat them – with sausage, scrambled eggs, and lots of cheddar cheese.  They are a perfect weekend breakfast.   When you make them, make a few in different varieties and freeze them.  They are delicious to pull out any weekday morning for a quick, savory breakfast.

Here’s how to make them: 

  1. Brown the sausage in a pan.  Once it is cooked, remove it from the pan and let it drain on a paper towel on top of a plate.
  2. Wipe out the pan (carefully) and either spray with non-stick cooking spray or add a small pat of butter to the pan.  In a mixing bowl, add eggs, a tbsp or two of milk, and mix well.   Add to pan.  Sprinkle with salt and pepper and cook until the eggs are cooked through.
  3. Lay a tortilla or wrap on a cutting board.  Sprinkle shredded cheddar cheese down the middle of the wrap, follow with some scrambled eggs, and then top with sausage.  Wrap up like a burrito.  Start rolling from one end and fold in the sides as you go.
  4. Wipe out the pan again and add a pat of butter.  Let the butter melt and then place the burrito in the pan seam side down.   Cook until the wrap has browned, add a tiny bit more butter, and flip the burrito over to the other side.  I like to cover the pan so I can assure the cheese has melted.
  5. Remove from the pan once all sides of the burrito is brown and cut it in half.

Ingredients
  

  • 6 eggs
  • 1/2 lb breakfast sausage
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 4 tbsp butter
  • salt and pepper

Instructions
 

  • In a skillet over medium/high heat, brown the sausage. Once it is cooked, remove it from the pan and let it drain on a paper towel lined plate.
  • In a small bowl, crack 6 eggs and add 2 tbsp of milk. Stir well.
  • Wipe out the skillet and add either non-stick spray or a pat of butter to the pan. Once it is hot, pour the eggs into the skillet and scramble them. Add a good sprinkle of salt and pepper as you're cooking the eggs. Once cooked, transfer to a bowl.
  • Lay a tortilla or wrap on a cutting board. Sprinkle cheddar cheese down the middle of the wrap, then top with scrambled eggs, and finally with browned sausage.

  • Roll into a burrito. Start with one end and start rolling the wrap, folding in the sides as you go.
  • Heat a skillet over medium heat. Add a pat of butter and let it melt. Once melted, lay the burrito in the skillet seam side down. Let it cook until browned.
  • Once the bottom side is brown, add a little more butter to the pan and flip the burrito over to the other side. I like to cover the skillet with a lid so I assure the cheese melts.
  • When all sides are browned, take the burrito out of the pan, cut it in half, and serve!
