Breakfast Quesadilla

My Breakfast Quesadillas are the perfect breakfast for a busy morning!  Filled with scrambled eggs, cheese, and crumbled sausage, these quesadillas can be made ahead, frozen, and popped in the toaster or microwave whenever you’re ready for a delicious, hearty breakfast. 

Ahhh breakfast!!  The meal of the day that is either casually enjoyed or eaten in a rushed panic.  During the school year, it doesn’t matter how early we get up – we’re still running out the door hoping everyone has eaten SOMETHING before the day begins.  I’ve always been a grab and go breakfast eater.  If I have to work on cooking breakfast in the mornings, it isn’t going to happen and I’m going to be starving by 11:00!  Hence the reason I love a make-ahead breakfast.

My Breakfast Quesadillas are hearty, packed with protein, and can be made to eat right away or frozen for a busy day.  They would make a beautiful addition to any brunch and could be made for the always delicious breakfast-for-dinner.  Add veggies, spinach, feta, and any other protein to make them just how you like them!

How to make Breakfast Quesadillas:

  • Start by scrambling 2 eggs in a little butter.
    • Break 2 eggs into a bowl.   Add 2-3 tbsp of milk or cream to the eggs.  Whisk until combined.
    • Heat a small skillet over medium/high heat.  Add a pat of butter and let it melt.  Once it has melted, pour in the egg mixture.  Season with a good pinch of salt and pepper.
    • Let the eggs sit until they begin to form curds and then gently stir.  When the eggs are mostly scrambled but still a little wet, take them off the heat and transfer to a plate or bowl.
  • Brown the sausage (or if you’re really in a hurry and want to make it even easier, buy the pre-cooked, crumbled sausage).
  • Wipe out the skillet you used for the eggs, turn on low-medium heat, and add a pat of butter to the pan.  Once the butter has melted, place one medium flour tortilla in the pan.
  • Top half the tortilla with shredded cheddar or Mexican blend cheese.   Add the scrambled eggs and sausage and top with more cheese.   Fold the other side of the tortilla over the ingredients and let it cook.  Flip the quesadilla over to brown the other side.
  • Cut into slices and enjoy!
