Classic Chicken Pot Pie

Classic Chicken Pot Pie is a classic, southern comfort food recipe.  Filled with roasted chicken, carrots, and peas and topped with a flaky crust, my Chicken Pot Pie is always a family favorite!

Chicken Pot Pie is one of those meals that’s warm, filling, and always a hit – especially on busy nights when you just want something easy and comforting on the table fast.

This version keeps things simple. No complicated steps, no fancy ingredients – just real food that tastes like home.

Here’s How I Make My Classic Chicken Pot Pie:

Ingredients:

  • 2 cups diced chicken breasts
  • 1 can of cream of celery soup
  • 1 1/2 cups of chicken broth
  • 3-4 carrots, diced
  • 1 cup of frozen peas
  • 2 TBSP of all purpose flour
  • salt and pepper

Instructions:

  1. Preheat oven to 375 degrees.
  2. Heat a Dutch oven or large pot over medium heat.  Add 2 TBSP of olive oil.  When hot, add the diced chicken. Sprinkle the chicken with 2 TBSP of flour, making sure to coat all the chicken pieces.
  3. When the chicken is slightly browned, add 1 1/2 cup of chicken broth and stir.  Add the diced carrots and cream of celery soup and stir to combine.
  4. Bring to a boil and then reduce heat to simmer for 15-20 minutes.
  5. While the filling is cooking, place one puff pastry or pie crust into a pie pan, pressing the sides into the pan.  Put in the oven for 5-7 minutes.
  6. Add the frozen peas to the filling and season with salt and pepper.
  7. Remove the pie crust from the oven and fill with pot pie filling. Top with the other pie crust/puff pastry, sealing the edges with your fingers.  Cut 4-5 holes into the top of the pie.
  8. Cook on 375 for 25-30 minutes or until browned.

 

Real Life Pro Tip

If you’re short on time, grab a rotisserie chicken from the store and add the shredded chicken to the filling when you add the frozen peas.  It makes the recipe even easier!
