6 Weeknight Dinners perfect for busy days!  Whether you’re shuttling kids back and forth to activities or working late, these dinners are delicious and on the table in about 30 minutes! 

Even though it has felt like we’ve had an ENDLESS, extended summer this year, it’s still so hard to get back into the routine of homework, activities, and bedtime.   I’ve gotten used to not making dinner until 7:00, eating at 8:00, and taking a summer night walk with the pups as late as 9:00.

As life is somewhat returning to normal again, these 6 Weeknight Dinners are easy, delicious, and will have dinner on the table in about 30 minutes.

Pasta with Pesto & Chicken

I love to roast a pan of chicken on Sunday and use it all week long for meals like this.   It just makes life so much easier!  This is a recipe that can easily be made vegetarian as well.   If you don’t have the time (or the desire) to make homemade pesto, grab a container from the store and call it a day!  Make sure to top with some grated parmesan cheese for even more flavor.

This delicious SkinnyTaste recipe is one of my family’s favorite recipes! Ham, swiss cheese, mustard, and pickles inside a pork tenderloin.  It tastes like a Cuban sandwich without the bread.   This is a great recipe to double and save for leftovers later in the week.

Teriyaki Noodles is my kids’ favorite dinner – and lunch the next day!  The simple ingredients in this recipe make such a delicious dinner.  Chicken, noodles, carrots, peas, and teriyaki sauce – how easy is that?!  Use some of the pre-made chicken I mentioned above and dinner will be on the table in no time.

Forget the kids’ favorite – Cuban Picadillo is one of MY favorites (& the kids love it too)!  Ground beef, green olives, and briny capers in a tomato-based sauce and served over rice.  It’s SO delicious and super easy.  And it makes enough for days of leftovers!

I don’t understand how such simple ingredients can be mixed together and result in something SO delicious!!  Turkey Stroganoff is ALWAYS good and this one gets extra bonus points because it is made with turkey instead of beef and much healthier.   I always make a double recipe when I make Turkey Stroganoff – it’s just delicious for leftovers.

After a busy day at work or running around for kid activities, there is just nothing better than a delicious, creamy chicken casserole.  My Southern Chicken Casserole is always my go-to during busy weeks.  We eat it for dinner one night and then I’ll pack it in the girls’ lunchboxes the next day.  It makes a lot so there’s always enough for 2 or 3 more meals.
