There isn’t a meal that is much more comforting than Beef Stew! There are so many beef stew recipes out there but this is how my mom made it growing up – nothing fancy but so very good. How can you go wrong with slow cooked beef, potatoes, and carrots?? If you want to get a little fancier, you can use better meat but it is just so easy on a busy day to throw in stew meat from the grocery store and move on with life. It’s all about simplicity, right??
