Simple Roasted Vegetables are a delicious and beautiful side for any meal!
Ingredients
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup multi-colored carrots
- 1 zucchini, cut into wedges
- olive oil
- salt & pepper
Instructions
- Preheat oven to 400 degrees.
- Cut the broccoli and cauliflower into smaller bite size pieces. Cut zucchini into wedges.
- Put all vegetables on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Mix well so all vegetables are coated.
- Bake for 20-25 minutes or until vegetables start to brown.
