Simple Lemon Vinaigrette is a light, delicious dressing perfect for any salad! With just a few ingredients like fresh lemon juice, Dijon, garlic, and olive oil, you can make this simple and zesty vinaigrette.
We’ve always been big fans of making our own dressings at home. If you keep a small handful of ingredients in your pantry, you can make just about any dressing and homemade ALWAYS tastes so much better than store-bought (but don’t get me wrong – I love some good bottled Ranch & Honey Mustard!).
I always make sure to have lemons available in my kitchen. To be honest, I use them mostly for cocktails – HA! – but I also feel like they enhance just about any recipe. A little squeeze of fresh lemon juice in dressings, on top of chicken dishes, or in a cocktail just adds that little extra zing. When I’m trying to recreate recipes I’ve had in restaurants – especially sauces – I find the secret ingredient is usually always lemon or lime. So grab some lemons, put them in a pretty bowl on your counter and use them for all kinds of things as you cook!
How to make Simple Lemon Vinaigrette:
- Combine minced garlic, freshly squeezed lemon juice, dijon, parmesan cheese, and oregano.
- Slowly drizzle in the olive oil while whisking constantly.
- Add a good pinch of salt & pepper and stir again before serving.
I love this dressing on arugula salad with freshly shaved parmesan and more black pepper. Serve it with my Chicken Piccata or Pork Schnitzel for an elegant and flavorful meal!

- 2 tsp freshly grated parmesan cheese
- 1 1/2 tsp dijon
- 1/4 cup olive oil
