Buffalo Chicken Quesadillas are full of buffalo chicken, Franks hot sauce, shredded cheese, and served with ranch dressing. These quesadillas are perfect for a quick dinner or delicious lunch! If you have a non-spicy eater in your house, you can make some quesadillas without the buffalo sauce. They’ll still be great!
Hi. My name is Katie and I am obsessed with buffalo sauce. It’s seriously a problem. I want it on everything! The good news about this is that hot sauce is pretty much calorie free – so I guess it’s a better problem to have than wanting butter or syrup or mayonnaise on everything (although I really like mayo too).
There used to be a great Mexican restaurant close to our house that had Buffalo Chicken Quesadillas on the menu. They were DELICIOUS!! They were perfectly spicy and served with a cilantro sour cream sauce that was amazing! The restaurant recently closed so my choice was to either never have them again or…..figure out how to make them myself. I obviously had to choose the 2nd option.
I ditched the cilantro sour cream and just use ranch dressing instead. These are perfect for a quick dinner or a great, flavorful lunch.
Here’s how to make them:
- You can use a rotisserie chicken or a pre-cooked chicken breast. If you are cooking the chicken yourself, cut the chicken into cubes. Add a little olive oil to a medium skillet over medium/high heat. Once the pan is warm, add the chicken and cook until the chicken is cooked through. Remove the chicken from the pan and set it to the side.
- Melt 2 tbsp of butter and add to a medium sized bowl. Add 3 tbsp of Franks Hot sauce to the butter and stir together. Add your chicken to the bowl and toss to coat all of the chicken with buffalo sauce.
- In a skillet, add one small pat of butter. When the butter has melted, add one flour tortilla to the pan. Top the tortillas with 1/2 cup of shredded cheese, half the buffalo chicken, and another 1/2 a cup of shredded cheese. Let the cheese begin to melt and then top with the other tortilla.
- Butter the top of the top tortilla and flip the quesadilla over to cook the other side. Once both sides are browned and the cheese has melted, remove from heat. Let cool a minute or two and then cut into triangles.
Buffalo Chicken Quesadillas
Ingredients
- 1 chicken breast, cut into cubes
- 3 tbsp butter
- 3 tbsp Frank's Hot Sauce
- 2 cups shredded Mexican cheese
- 4 flour tortillas
- Ranch dressing (optional)
Instructions
- Cut chicken breast into cubes. Cook in a skillet over medium heat until cooked through. Remove chicken from skillet.
- Melt 2 tbsp of butter in the microwave. Pour into a medium bowl. Add 3 tbsp of hot sauce. Add the chicken to the bowl and toss to coat all of the chicken.
- In a different medium skillet, add a pat of butter. When it has melted, add one of the flour tortillas. Top the tortillas with 1/2 cup of shredded cheese, as much of the buffalo chicken as you'd like, and another 1/2 cup of shredded cheese. Let the cheese melt for a few minutes. Top with the other flour tortilla. Butter the top tortillas as the quesadilla is cooking. Flip the quesadilla to cook the other side. Make sure the cheese is melted. Once it is melted, remove it from the heat and transfer to a cutting board. When slightly cooled, cut into triangles.
- Serve with ranch dressing or sour cream.
