Happy New Year!!  In typical January fashion, I’m eating salads, drinking lots of water, and trying to undo everything I’ve done since basically Halloween!  I’m all about eating healthy as long as my meals have LOTS of flavor so I don’t miss the high calorie meals.   Chrissy Teigen’s Cobb Salad offers just what I need to ease into the healthy eating.   Yes – it IS a salad but with this much flavor, you’ll forget you’re eating a salad at all.   And trust me – you’re going to want more of the chicken and you’ll want to bathe in the dressing so make extra of both!!

Chrissy Teigen's Cobb Salad with Honey-Mustard Ranch Dressing

Chrissy Teigen's Cobb Salad is delicious and SO flavorful you'll forget you're even eating a salad at all! Add extra veggies of your choice or leave out anything you don't enjoy. And make extra dressing - the stuff is addictive and so good!

Ingredients
  

Chicken:

  • 1 1/2 tsp paprika
  • 3/4 tsp cumin
  • 1/4 tsp thyme
  • 1/4 tsp black pepper
  • good pinch of salt
  • good pinch of pepper
  • olive oil
  • 3/4 lb chicken breasts or cutlets
  • 1 cup frozen corn kernels

Dressing:

  • 1/2 cup mayonnaise (I used light mayo)
  • 1/4 cup buttermilk
  • 2 tbsp dijon mustard
  • 2 tbsp honey
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • pinch of cayenne
  • pinch of salt and pepper

Salad:

  • 1 head iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, diced or sliced
  • 4-5 slices of bacon
  • 2 hard-boiled eggs

Instructions
 

  • Preheat oven to 350.
  • Combine the ingredients for the chicken in a small bowl along with 1 tbsp of olive oil. Rub the mixture over the chicken breast/cutlet. Put the chicken in a baking dish and bake for 15 minutes. After 15 minutes, add the corn to the same baking dish and put the oven on broil for 4-5 minutes. Move chicken to a plate and slice. Reserve corn for salad.
  • While the chicken cooks, mix together the dressing ingredients. I like to put all dressing ingredients in a Mason jar and shake well.
  • When you're ready to eat, arrange the lettuce on a plate or salad bowl. Top with sliced avocado, tomatoes, bacon, sliced chicken, and charred corn.
  • Drizzle dressing over salad and enjoy!
