Ingredients
  

For the sandwich:

  • 2 chicken cutlets or 1 chicken breast cut in half and pounded
  • 1/2 cup arugula
  • 4 slices of cooked bacon
  • 2 slices of provolone cheese
  • 2 slices of tomato
  • 2 deli brioche buns
  • 2 tbsp herbs de Provence seasoning
  • 1 tbsp olive oil
  • salt & pepper

For the aioli:

  • 1/4 cup mayonnaise
  • juice from half a lemon
  • 1/2 tbsp minced garlic
  • salt & pepper

Instructions
 

  • Season the chicken on both sides with herbs de Provence, salt, and pepper.
  • Heat a skillet over medium heat and add 1 tbsp of olive oil. When oil is hot, add chicken to the pan, cooking on each side for about 3 minutes (if using cutlets).
  • While chicken is cooking, cook the bacon slices either in a pan, microwave, or oven.
  • When the chicken is done cooking, remove from heat and set aside.
  • Separate the buns. Place a piece of provolone cheese on the bottom half of the buns. Place both sides of buns in a toaster oven to toast and melt the cheese.
  • While the buns are toasting, make your garlic aioli. Stir 1/4 cup of mayonnaise, the juice from half a lemon, 1/2 tbsp of garlic, and a good pinch of salt and pepper together in a small dish.
  • When the buns have toasted, slather both sides of the buns with the aioli. To the bottom bun, add a slice of tomato, the bacon and top with the chicken. Add arugula to the top of the chicken and cover with the other half of the bun.

My love for a good sandwich runs DEEP! There really isn’t a day that goes by that I don’t crave a sandwich for lunch.  But, of course, it can’t be just any ‘ol sandwich.   Enter my Grilled Chicken Club Sandwich…..full of delicious ingredients and a garlicky, homemade aioli that MAKES this sandwich.

Side note: Aioli in its purest form is simply defined as garlic and olive oil emulsified together.   Nowadays, mayonnaise is used in most aiolis since it adds a creaminess with its ingredients of oil, egg yolks, and lemon juice.  My basic aioli is mayonnaise, lemon juice, garlic, and salt and pepper.  You can flavor aiolis with many different ingredients like rosemary, thyme, chili oil, etc.

Back to our Grilled Chicken Club Sandwich – I love making this sandwich for lunch but have also used ciabatta bread and cut it up into smaller bites for a really delicious tailgate/party food.  Serve it with a toothpick down the center for an easy finger food.   No matter how you serve it, people will ask how you made it!

 

How to make The BEST Grilled Chicken Club Sandwich:

  • Chicken: Season your chicken cutlets with your favorite seasoning – whether its a seasoned salt, Italian seasoning, or Herbs de Provence like I used.  Just make sure to use enough seasoning so it can be tasted.
  • Greens: I love the peppery accent of arugula on a sandwich but you could also use watercress or Bibb lettuce.
  • Bacon: I like to use a thick-cut bacon for this sandwich.  It adds to the gourmet quality and gives so much flavor!
  • Tomato: My trick anytime I use a tomato on a sandwich is to salt and pepper and tomato slices before you add them to a sandwich.  Try it – I promise it makes a difference!
  • Cheese: Use your favorite cheese.  I always reach for provolone but fresh mozzarella, fontina, or white cheddar would also be delicious!
  • Aioli: You don’t have to make the aioli for this sandwich….but when you try it WITH the aioli, you’ll see why I use it!  It takes the sandwich from ordinary to unbelievable!
