The BEST Grilled Chicken Club Sandwich puts any take-out sandwich to shame! Filled with seasoned chicken, arugula, provolone, smoky bacon, and creamy, homemade garlic aioli, this is a sandwich you will crave!
2chicken cutlets or 1 chicken breast cut in half and pounded
1/2cuparugula
4slices of cooked bacon
2slices of provolone cheese
2slices of tomato
2deli brioche buns
2tbspherbs de Provence seasoning
1tbspolive oil
salt & pepper
For the aioli:
1/4cupmayonnaise
juice from half a lemon
1/2tbspminced garlic
salt & pepper

Season the chicken on both sides with herbs de Provence, salt, and pepper.
Heat a skillet over medium heat and add 1 tbsp of olive oil. When oil is hot, add chicken to the pan, cooking on each side for about 3 minutes (if using cutlets).
While chicken is cooking, cook the bacon slices either in a pan, microwave, or oven.
When the chicken is done cooking, remove from heat and set aside.
Separate the buns. Place a piece of provolone cheese on the bottom half of the buns. Place both sides of buns in a toaster oven to toast and melt the cheese.
While the buns are toasting, make your garlic aioli. Stir 1/4 cup of mayonnaise, the juice from half a lemon, 1/2 tbsp of garlic, and a good pinch of salt and pepper together in a small dish.
When the buns have toasted, slather both sides of the buns with the aioli. To the bottom bun, add a slice of tomato, the bacon and top with the chicken. Add arugula to the top of the chicken and cover with the other half of the bun.
