Teriyaki Chicken Skewers

Teriyaki Chicken Skewers are my one of our girls’ favorite recipes!  They lovingly refer to them as “chicken on a stick”.  They are wonderful small bites of chicken coated in a combination of teriyaki and hoisin sauce.   Serve them as an appetizer, pack them in lunch boxes for school, or enjoy them as an easy dinner with some veggies on the side.  Any way you serve them, they’ll go quickly! 

Ohh the joys of being back to school and back to packing school lunches again.  My husband takes the brunt of this job and physically packs the lunch but that still leaves the worst part….coming up with ideas!  Our girls aren’t big sandwich eaters – which I love and hate.  I love that they are adventurous eaters but sometimes I just want to pack a damn sandwich and move on!!!

In my search for non-sandwich items, I came across chicken satays or skewers as an option.  Now if I tell my 8 year old they are called satays, she won’t come near them BUT….if we call them Chicken on a Stick, she’s ALL about it!  These Teriyaki Chicken Skewers have become one of their favorites and one of mine as well.  Its easy to throw together quickly, it tastes delicious, and it makes enough that it just might cover lunch all week long!

Teriyaki Chicken Skewers

I am always looking for easy, quick, non-sandwich lunchbox ideas for my girls!   They'll eat just about anything if I put it on a "stick" (aka a skewer)!  These teriyaki chicken skewers are simple and fast and are great hot or cold.

Equipment

  • wood skewers, baking sheet or casserole dish

Ingredients
  

  • 1 lb chicken tenderloins
  • 4 tbsp hoisin sauce
  • 1-2 tbsp teriyaki sauce
  • 1 tsp minced garlic
  • salt and pepper

Instructions
 

  • Preheat oven to 350. 
  • Cut tenderloins in half at an angle and place in mixing bowl.
  • In a smaller bowl, mix together hoisin sauce, teriyaki sauce, and garlic. Add pinch of salt (the teriyaki and hoisin are very salty so you don't need much) and a couple of big pinches of pepper.  You want the sauce to be thick but pourable. If it easily coats the back of a spoon, the consistency is good.
  • Add sauce to chicken and mix until coated well. Take each piece of chicken and thread onto skewers leaving half the skewer exposed on one end (see picture on next step).  
  • Line a small casserole dish with foil and place chicken on pan with skewer ends pointing out.  (See picture)
  • Cook for 15-20 minutes or until chicken is cooked through.
