Simple Chicken a la King is a delicious, quick, comfort food meal! Roasted bites of chicken are cooked with mushrooms, carrots, and peas in a delicious creamy sauce and served over rice, a biscuit, or toast. Check out the recipe for this wonderful, comfort meal below. Â
Simple Chicken a la King
Ingredients
- 3 chicken breasts, cooked and diced
- 1 cup roughy chopped mushrooms
- 1 1/2 cups chopped carrots
- 1/2 cup frozen green peas
- 1/4 cup butter
- 1/2 cup all purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 2 cups chicken broth
- 1/2 tbsp tarragon
- 2 tsp minced garlic
- salt and pepper
Instructions
- Add butter to a Dutch oven or heavy pot. When it has melted, add the mushrooms, chopped carrots, and minced garlic and cook for 3-4 minutes until they begin to soften.
- Add 1/2 cup of flour to the vegetables and stir until all vegetables are coated.
- Add the milk, heavy cream, and chicken broth to the pan and bring to a boil. Lower the heat and let the mixture simmer and thicken for 3-4 minutes.
- Add in the chopped cooked chicken, frozen peas, tarragon, salt and pepper.
- Continue to cook until mixture is like a thick soup. Serve over white rice, a biscuit, or a piece of toast.
When I went to college, my mom sent me with a few recipes she knew were easy enough for me to fix on my own. One of them was Chicken a la King.  Her recipe included a can of cream of mushroom soup, some cooked chicken, and not a vegetable to be found. It was pure comfort food and always reminded me of home.
Although I use canned soups often for some southern recipes, I omitted it for this recipe because the sauce is so simple and easy to make on its own. Feel free to throw in any other veggies you love. I like this my Chicken a al King served over a crispy piece of toast but my kids loved it over rice. Any way you eat it, its going to be great!
