Here’s how I make my Pesto Avocado Chicken Sandwich:

Ingredients:

  • 1 grilled & seasoned chicken breast
  • 4 slices of your favorite bread (ciabatta, sourdough, or whole grain work great)
  • 1 ripe avocado
  • 1/4 cup pesto (store-bought or homemade)
  • 1 slice of cheese of your choice (I used colby but mozzarella would also be delicious)
  • 1 handful of cherry tomoatoes or 1/2 a large tomato sliced
  • Italian seasoning for chicken
  • Garlic powder
  • 1 tbsp butter for toasting
  • Salt & pepper to taste

Instructions:

  1. Prepare the chicken: Season the chicken breast with garlic powder, Italian seasoning, salt, and pepper. Grill it in a skillet with a little olive oil under cooked through.  Remove from skillet and slice the cooked chicken breasts thinly.
  2. Slice the avocado and tomatoes.
  3. Assemble: Spread pesto on each slice of bread. Layer cheese, sliced chicken, tomato, and avocado on one slice of bread.
  4. Top & toast: Place the remaining slice of bread on top to create the sandwich. Heat a skillet over medium heat and add a little olive oil or butter. Toast the sandwich for 2-3 minutes on each side until golden brown and the cheese is melty.
  5. Serve: Slice in half and serve warm.

Tips:

  • Make it ahead: Assemble and refrigerate (without toasting) for up to 24 hours.
  • Dairy-free? Swap mozzarella for dairy-free cheese or skip it altogether.
  • Low-carb? Serve it as a lettuce wrap or over a salad.

  • 1 chicken breast

  • 1 slice of colby jack cheese or any cheese of your choice
  • 1 handful of cherry tomatoes or 1 large tomato, sliced
  • 1 tbsp Italian seasoning
  • 1/2 tbsp garlic powder
  • 1 tbsp olive oil or butter
  • salt & pepper

Instructions
 

  • To prepare the chicken: Season the chicken breast with Italian seasoning, garlic powder, salt and pepper. Grill the chicken in a skillet with a little olive oil until browned on both sides and cooked through.
  • Slice the avocado and tomatoes.
  • Spread pesto on each piece of bread. Top one side with cheese, sliced chicken, avocado, and tomatoes.
  • Add 1 tsp of butter to a skillet and grill the sandwich on both sides until toasty.
