Ingredients
  

  • 1 chicken breast
  • 2 slices of bread (ciabatta, sourdough, whole wheat)
  • 1 ripe avocado
  • 1/4 cup pesto
  • 1 slice of colby jack cheese or any cheese of your choice
  • 1 handful of cherry tomatoes or 1 large tomato, sliced
  • 1 tbsp Italian seasoning
  • 1/2 tbsp garlic powder
  • 1 tbsp olive oil or butter
  • salt & pepper

Instructions
 

  • To prepare the chicken: Season the chicken breast with Italian seasoning, garlic powder, salt and pepper. Grill the chicken in a skillet with a little olive oil until browned on both sides and cooked through.
  • Slice the avocado and tomatoes.
  • Spread pesto on each piece of bread. Top one side with cheese, sliced chicken, avocado, and tomatoes.
  • Add 1 tsp of butter to a skillet and grill the sandwich on both sides until toasty.
