2 slices of bread (ciabatta, sourdough, whole wheat)
1ripe avocado
1/4cuppesto
1slice of colby jack cheese or any cheese of your choice
1handful of cherry tomatoes or 1 large tomato, sliced
1tbspItalian seasoning
1/2tbspgarlic powder
1tbspolive oil or butter
salt & pepper

Instructions
To prepare the chicken: Season the chicken breast with Italian seasoning, garlic powder, salt and pepper. Grill the chicken in a skillet with a little olive oil until browned on both sides and cooked through.
Slice the avocado and tomatoes.
Spread pesto on each piece of bread. Top one side with cheese, sliced chicken, avocado, and tomatoes.
Add 1 tsp of butter to a skillet and grill the sandwich on both sides until toasty.
