Memorial Day Weekend Recipes

I don’t know how we’ve already gotten to Memorial Day this year!  Thinking back to last Memorial Day, didn’t things feel SO different?? They definitely did to me!  I’m ready for a fun weekend at the beach with my family and some friends-who-should-be-family and we’re planning on some great meals throughout the weekend.  This post will be highlighting just a few of the Memorial Day recipes we’ll be making.  Hopefully you can use some of our ideas and try out some of these Memorial Day recipes as well! 

Memorial Day Meals and Recipes

I have to start out by highlighting WasserDude’s Rotisserie Pork Tenderloin in case you missed it last week.  It is SO delicious!!  The recipe can be made on a regular grill without the rotisserie as well.   I am NOT a coffee drinker and I love the rub on the tenderloin.   It doesn’t have any coffee flavor but just caramelizes the outside of the pork perfectly!   

Doesn’t that just look SO GOOD!!! 

Pork Tenderloin 

We love to grill – especially when we’re at the beach and feeding a bigger crowd of people (still 10 or less – don’t worry).  Kebabs are one of my favorite things to make.  These Teriyaki Chicken and Pineapple Kebabs are great on the grill!  And we always throw some Steak Kebabs with Vegetables on as well.

Grilled Teriyaki Chicken and Pineapple Kebabs

 

For sides, since the grill is already heated up and ready to go, we love to grill garlic bread. The taste is AMAZING – it puts the frozen garlic bread to shame and is a whole LOT cheaper to make.  I found this recipe from Giada De Laurentiis years ago and its still my favorite for garlic bread.  Here’s what we do: 

Garlic Bread

  • Slice french bread into 1/2 inch wide slices.  
  • Brush both sides with olive oil.  
  • Place on the grill, turning to brown both sides (and I have to say it because we all know how I ALWAYS burn the bread – DON’T BURN IT!)
  • Once the bread is grilled, take a cut piece of fresh garlic and rub the bread with the cut side of the garlic clove.  
  • Slice a tomato in half and rub the bread with the cut side of the tomato as well. 
  • Sprinkle with kosher or sea salt.  

 

For dessert, I LOVE a fruit tart!  I’m not a huge dessert person so this is just enough sweetness for me.  It’s basically like a sugar cookie topped with a cream cheese mixture and delicious berries.  And look how beautiful it is!!

You can find the recipe HERE for this delicious Fruit Tart.  The design can, of course, be prettier but I let my girls decorate it when we made it for Easter.  I did finally get to restore a little order to it by making the strawberry border!  I’m not anal about much but neatly decorated desserts are clearly one things I’m picky about!!
