Grilled Mahi Mahi

This Grilled Mahi Mahi is the easiest fish recipe and SO delicious!!  A quick and simple marinade of teriyaki and dried basil and a last minute glaze makes this recipe my favorite fish marinade.   You can use any type of flaky, white fish you prefer – I love the taste and texture of mahi mahi for this dish. 

 We spend a lot of our time in a little town in Florida called Cocoa Beach.   It was our family spring break and summer vacation spot to me growing up and I loved the weeks we’d spend there.  We’ve tried to give our girls the same amazing weeks in our favorite little spot.  In the last few summers, I’ve taken the girls and we’ve spent a few weeks each summer there – with friends coming and going whenever they can.  During quarantine, it really became our 2nd home.  We knew we could get there, hole up in the condo with a beautiful view, and be safe distancing ourselves from everyone.

Although we haven’t been able to go lately, one of our favorite restaurants in Cocoa Beach is a little place called Grills Seafood Bar & Tiki Hut.  They only offer the freshest fish, usually caught right outside the restaurant.  They even say on the menu “if you want fried fish, go to Long John Silvers”!  Their grilled mahi mahi is a favorite of mine – the marinade is just perfect.  It’s not too overwhelming but still gives the fish the most delicious flavor.

How to make Grilled Mahi Mahi:

  • Put the Mahi Mahi in a large resealable bag.  Add the teriyaki sauce and dried basil and mix well.   Let it marinate for 1-2 hours.
  • After the fish has marinated, reserve half a cup of the marinade in a separate bowl.  Add 1/2 cup of mayonnaise to the marinade and stir well.
  • Take each individual piece of fish and dip into the mayo/marinade mixture.   Let the excess drip off and quickly add it to the hot grill or skillet.
  • Cook for 4-5 minutes on each side.   Serve immediately.

To make this recipe keto-friendly:

    • Replace teriyaki sauce with Primal Kitchen No Soy Teriyaki Sauce.
    • Replace mayo with any keto-friendly mayo brand.

Grilled Mahi Mahi

This delicious fish marinade is perfect on any white, flaky fish and is FULL of flavor!

Ingredients
  

  • 3 mahi mahi filets (skin removed)
  • 2 cups teriyaki sauce
  • 3 tbsp dried basil
  • 1/2 cup mayonnaise

Instructions
 

  • Put the Mahi Mahi in a large resealable bag. Add the teriyaki sauce and dried basil to the bag and mix it well so the fish is completely covered.
  • Refrigerate the marinating fish for about 1-2 hours.
  • After the fish has marinated, remove the fish from the marinade and set aside, reserving the marinade. Pour 1/2 cup of the reserved marinade into a bowl and add 1/2 cup of mayonnaise. Mix very well.
  • Heat a skillet or a grill to medium high heat. Take each piece of fish, dip in the mayonnaise mixture and put it immediately on the grill or skillet. Cook for 4-5 minutes on each side.
  • Serve with your favorite vegetable and a side of rice.
