Greek Salad and My Favorite Easy Meal

There is something so amazing when an entire family turns out to be your entire family’s best friends! We have that with our best friends.  My girls are best friends with their daughter, my husband would definitely call Chris his best friend, and Kim is just my closest friend anywhere.   And the even better part – they love to cook as much as we do!  It makes for amazing nights with great food and delicious cocktails!  This is one of their dinner recipes they made for us a couple of years ago and it has become a favorite of ours.  Grilled chicken with Greek seasoning paired with a fresh Greek salad, grilled naan bread, and Skinnytaste tzatziki.  Its so simple and delicious and makes  a lot of leftovers for lunch the next day! 

I marinate the chicken with a little oil oil, Cavender’s Greek seasoning, and a squeeze of lemon before grilling.

We brush naan bread with olive oil, sprinkle it with salt and oregano, and add it to the grill for just a few minutes.  And our dinner is ready!

Greek Salad is one of my favorite salads to make.  I am not a fan of cucumber so I customize mine by adding zucchini instead. I usually pair this salad with grilled chicken, Skinnytaste tzatziki, and grilled bread.  It's also delicious for lunch the next day!

Ingredients
  

  • 1-2 zucchini squash chopped
  • 4-5 Roma tomatoes
  • 1/2 purple onion chopped
  • 1 small container of feta cheese
  • Chopped black olives - as many as you like 
  • Olive oil 
  • Fresh lemon juice
  • Red Wine Vinegar 
  • Salt & pepper

Instructions
 

  •  Chop the zucchini, tomatoes, and onion and add them to a large bowl. 
  • Add the chopped black olives and top with feta cheese
  • Stir the ingredients together. 
  • Do one swirl of olive oil over the salad, a few dashes of red wine vinegar, and a squeeze of lemon.  Top with salt and pepper.
