Fajita Chicken Bowl

My Fajita Chicken Bowl is a lightened up version of your favorite restaurant chicken fajitas but with only a fraction of the calories.  Packed full of marinated chicken breasts and veggies, you won’t miss the cheese, tortillas, or sour cream served with most restaurant fajitas.  This bowl is hearty and filling and a perfect healthy lunch or dinner recipe!

Ingredients
  

  • 1 breast marinated chicken
  • 1/2 cup cooked rice
  • 1/2 cup shredded lettuce
  • 1/2 green or red bell pepper, cut into slices
  • 1/4 onion, cut into slices
  • cherry tomatoes
  • canned corn
  • chipotle ranch dressing

Instructions
 

  • Cook rice according to package instructions.
  • Slice cooked chicken into strips or chunks and set aside. Cut tomatoes in half and heat up canned corn in microwave.
  • Slice 1/2 a green or red (or both) bell pepper and onion. Heat a small skillet over medium heat and add a little olive oil or butter. Cook the bell pepper and onion together until soft. Add the chicken if you want it reheated.
  • To assemble salad, add rice to a bowl and top with lettuce, cooked peppers and onions, tomatoes, and corn.
  • Drizzle with store-bought Chipotle Ranch dressing.

This Fajita Chicken Bowl is a delicious, healthy lunch and a perfect way to use up leftovers from earlier meals.  I made my super easy Fajita Chicken for tacos earlier in the week and saved the leftover chicken just so I could make this healthy lunch bowl.  Add white or brown rice, shredded lettuce, grilled peppers and onions, tomatoes, and the leftover chicken for a filling, yummy lunch.

Here’s how to make my Fajita Chicken Bowl:

  1. Use my recipe for my Fajita Chicken marinade for any Tex Mex chicken recipe you love.
  2. Slice the cooked fajita chicken into strips.
  3. Slice the red or green bell pepper and 1/4 onion into strips.  Heat a small skillet over medium heat and add a little olive oil or butter.  Add the peppers and onions and cook until soft.   If you want to reheat the chicken, add it into the pan for a minute or two when the peppers and onions are almost cooked.
  4. Add cooked rice to a bowl and top with shredded lettuce, the peppers and onions, sliced tomatoes, and a little canned corn.  Top with the chicken and any other ingredients you love – avocado slices, shredded cheese, olives, etc.
  5. Drizzle the top with store-bought Chipotle Ranch dressing.

 

Lunch or dinner bowls are so easy and a great meal everyone in the family can customize to fit their own tastes.  Any leftover protein from dinner will work great in a bowl.   I love to add protein and lots of veggies for extra flavor while my youngest daughter prefers just the protein and rice.  Here are some ideas of easy bowls and the ingredients you may want to include:

Mediterranean Bowl:

  • Leftover Greek chicken or salmon, cous cous, olives, tomatoes, zucchini, feta cheese.
  • Topped with store-bought tzatziki and a squeeze of lemon.

 

Pizza Bowl

  • Leftover pasta, pepperoni, shredded mozzarella cheese, and a couple of spoonfuls of tomato sauce.

 

Ahi Tuna Bowl

  • Leftover seared tuna, cooked rice, shredded carrots, shelled edamame.
  • Top with a sauce of 2 tbsp mayo mixed with 1 tsbp sriracha.
