It is March 13th – Friday the 13th, I should add – and our country is in the midst of the coronavirus panic! Stores around us are empty – no chicken, beef, ground turkey, paper towels, toilet paper, produce, etc. Our kids are out of school for the next 2 weeks. It is just a BIT crazy! And my guess is it is only going to get crazier in the upcoming days and weeks. When things get crazy in my world, I turn to something that always calms me (in addition to wine)….cooking. As much as I don’t think we will be stuck in our houses for weeks on end, I’d much rather prepare for the worst and be surprised than not prepare at all. So I’m cooking…..like a crazy person! I’m cooking for my family, my parents, and really anyone else who needs food. I have stocked up our freezers and fridges and I don’t think we’ll be running out of groceries for quite awhile. We might get sick, we might get bored, we surely are going to get irritated with each other…..but we will not be hungry!
So if you are anything like me and trapped in your house with your children for the next few weeks, you might as well put on some good music and make some great food because I guarantee you they are going to be hungry….all day, every day for the next few weeks.
Cuban Picadillo is a dish everyone in my family loves! And you can throw it together in no time. I serve mine over yellow rice but you can also use white or brown rice.  Let me know what you think!
Picadillo
Ingredients
- 1 1/2 lbs ground beef (or ground turkey)
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 3 cloves of minced garlic
- 14/5 oz diced tomatoes
- 2 tbsp tomato paste
- 2 handfuls of green olives with pimento, cut in half
- 2 tbsp capers
- 1 bay leaf
- 2 tsp cumin
- 1 tsp paprika
- salt and pepper
Instructions
- Add a couple of tbsp of olive oil to a large pan over medium high heat.
- Brown the ground beef.
- Add the diced onion, minced garlic, and chopped red pepper to the browned beef. Cook until soft.
- Add the diced tomatoes, tomato paste, bay leaf, and spices. Cut the green olives in half and add them to the pan along with the capers.
- Turn the heat down to low and let the picadillo simmer for a few minutes. Serve over yellow rice.
Exactly like the ones I used to get from a food truck in Miami. Perfect
