Picadillo

Picadillo is a classic Cuban dish that is not only delicious but so easy to throw together quickly. The saltiness of the olives and capers mixed with the rich flavor of tomato sauce and ground beef make this a dinner everyone will love!

Ingredients
  

  • 1 1/2 lbs ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves of minced garlic
  • 14/5 oz diced tomatoes
  • 2 tbsp tomato paste
  • 2 handfuls of green olives with pimento, cut in half
  • 2 tbsp capers
  • 1 bay leaf
  • 2 tsp cumin
  • 1 tsp paprika
  • salt and pepper

Instructions
 

  • Add a couple of tbsp of olive oil to a large pan over medium high heat.
  • Brown the ground beef.
  • Add the diced onion, minced garlic, and chopped red pepper to the browned beef. Cook until soft.
  • Add the diced tomatoes, tomato paste, bay leaf, and spices. Cut the green olives in half and add them to the pan along with the capers.
  • Turn the heat down to low and let the picadillo simmer for a few minutes. Serve over yellow rice.
