Classic Beef Stroganoff is such a delicious, classic comfort food! Ground beef, mushrooms, onions, and sour cream cooked together and served over egg noodles. It’s about as good as it gets!
Beef Stroganoff is a favorite in our house! Not only because it’s delicious and pure comfort but also because I know it’s something both of my girls will eat and love. I always make sure to make enough for leftovers and for the girls to take to school the next day.
Classic Stroganoff originated in Russia and is usually made with sautéed pieces of beef cooked in butter, red wine, sour cream, and mustard and typically made with mushrooms. There are TONS of variations on this dish and everyone’s recipe is a little different. I prefer to make my stroganoff with ground beef instead of chunks of beef. I find it’s easier and faster but that is just a personal preference. You can certainly use sauteed pieces of beef (if you’re fancy) and still follow this recipe and sub out the ground beef.

How to make Classic Beef Stroganoff:
- Get your pot and water ready for the egg noodles. Cook them as the package recommends.
- Brown 1 lb of ground beef in a large skillet. Once browned, add the chopped onions (1 onion) and mushrooms. Add as many mushrooms as you like. We LOVE mushrooms so I also add more than normal. Cook until the mushrooms are soft.
- Add 2-3 tbsp tomato paste, a tsp of Worcestershire, and one beef bouillon cube, and 1/2 cup of beef consomme. Combine all of the ingredients.
- Turn the heat down a little and add 8 oz of sour cream and 3 tbsp of milk (or heavy cream if you prefer). Stir together. Taste to see if you need more salt or pepper.
- Serve on top of the egg noodles.

Classic Beef Stroganoff is pure comfort food! Packed full of flavor with ground beef, mushrooms, and onions served in a delicious sauce over egg noodles. This is always a family favorite!Ingredients
- 1 lb ground beef
- 1/2 onion, minced
- 1 package of sliced mushrooms
- 2-3 tbsp tomato paste
- 8 oz sour cream
- 3 tbsp milk or heavy cream
- 1 beef bouillon cube
- 2 tsp Worcestershire sauce
- 1/2 cup beef consomme
- 1 tsp paprika
- 1/2 package of egg noodles
- salt & pepper
Instructions
- Bring a pot of water to boil and cook the egg noodles as the package recommends.

- Once browned, add the chopped onions (1 onion) and mushrooms. Add as many mushrooms as you like. Cook until the mushrooms are soft.
- Add 2-3 tbsp tomato paste, 2 tsp of Worcestershire, one beef bouillon cube, 1/2 cup of beef consomme, and 1 tsp of paprika. Combine all of the ingredients.
- Turn the heat down a little and add 8 oz of sour cream and 3 tbsp of milk (or heavy cream if you prefer). Stir together. The mixture should be creamy but thick.
- Taste to see if you need more salt or pepper. Serve on top of the egg noodles.
