Chicken & Rice Casserole is a one-pan, comfort food recipe your family will love!  This simple 5 ingredient recipe combines cream of mushroom and chicken soup, chicken, white rice, and a little celery.  It comes together in just 5 minutes and is creamy and delicious and SUCH a family favorite. 

Chicken &. Rice. Casserole – for me, just the name feels like a huge hug!  How can you go wrong with creamy rice and chicken baked together?   This recipe is one of my girls’ favorite meals and it almost feels wrong that it is SO easy and simple.  Pour in some rice, a couple of cans of soup, uncooked chicken (yep – you don’t even have to cook it first!!), chopped celery, pour melted butter on top and you have a DELICIOUS, homemade meal that I guarantee your family will ask for again and again.

Here’s how to make Chicken & Rice Casserole:

  • In a large bowl, combine 2 cups of rice, 1 can of cream of mushroom soup, 1 can of cream of chicken soup, 1 soup can of water, and 1/4 cup of chopped celery.  Stir together.
  • Spray a casserole dish with non-stick spray and pour the soup and rice mixture into the casserole dish.
  • Cut uncooked chicken breasts in half and then in half longways, slicing through the center of the chicken to make 2 thinner pieces.
  • Nestle the chicken on top of the rice mixture, pressing them down so the rice surrounds the chicken.   Season the chicken with salt and pepper.
  • Cook at 350 for 45 minutes to an hour.

Ingredients
  

  • 1 lb chicken breasts, cut into smaller, thinner pieces
  • 2 cups white rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/4 cup chopped celery
  • 1 soup can of water
  • 2 tbsp melted butter, optional

Instructions
 

  • In a large bowl, stir together white rice, both soups, 1 soup can of water, and chopped celery. Stir well.
  • Spray a casserole dish with non-stick spray and pour the soup and rice mixture into the casserole dish.
  • Cut the chicken breasts in half and then in half longways so you have thinner pieces of chicken. Nestle the chicken into the rice mixture so the rice is surrounding the chicken. Sprinkle the chicken pieces with salt and pepper. Pour a tbsp of melted butter over the top of the casserole.
  • Cook at 350° for 45-55 minutes or until the chicken is cooked through and the rice is slightly browned.
