My Buffalo Bacon Melt is a delicious, melted combo of buffalo chicken, crispy bacon, fontina cheese, and a drizzle of ranch. This grilled handheld sandwich is perfect for lunch or a savory snack!
Does it mean anything important if I crave buffalo sauce and buffalo chicken ALL the time?!? I could eat it in some form for every meal. Our family has a favorite deli in town that we’ve gone to about every weekend for the past 5 years or more. They have a special now and then called a Buffalo Bacon Melt Sandwich. I’ve used it as inspiration for this grilled lunch wrap. And, just like the deli’s version, it’s pretty darn delicious!
Here’s how to make my Buffalo Bacon Melt:
- Dice up a chicken breast and cook in a skillet with 2 tbsp of butter, salt, and pepper. Once it is almost cooked, add 3-4 tbsp of your favorite buffalo sauce.
- Cook 1-2 pieces of bacon in the oven or microwave until crispy.
- Lay a wrap flat on a cutting board. I like to use a low carb wrap for mine but you can also use a large flour tortilla or any other kind of wrap.
- Slice a few pieces of fontina cheese and lay them on half of the wrap. Top with the buffalo chicken and crumbled bacon. Top with 1/4 cup of shredded Italian cheese. Drizzle more buffalo sauce in the wrap if you like it spicy. Fold the other side of the wrap over the chicken, bacon, and cheese.
- Heat a skillet over medium heat and add 1 tbsp of butter. When the butter has melted, add the wrap to the skillet. Cook on each side for 2-3 minutes, making sure not to burn the wrap. After you’ve grilled both sides, cover and turn the heat down to low and cover the pan for a few minutes to make sure the cheese inside the wrap is melted. Once it has melted, remove from the skillet and cut into 2 pieces.

Ingredients
- 1/2 chicken breast, diced and cooked as instructed below
- 1 low carb wrap (you may also use a flour tortilla)
- 2-3 oz fontina cheese
- 1-2 slices of cooked bacon
- 3 tbsp butter
- 3-4 tbsp buffalo sauce
- Ranch dressing
