I’m a little obsessed with avocados in the summer! I love them on toast for breakfast or mixed with raw tuna and sesame seeds in a beautiful salad for dinner. They just brighten up any dish…..and are so good for you! Here are just a few of the healthy benefits of avocado (I don’t know this off the top of my head – I had to look it up. But I thought it was very interesting and hope you do too):
- They have more potassium than a banana (and, really, taste SO much better)
- Full of vitamins B5, B6, C, E, and K
- Can lower cholesterol and triglyceride levels
- Great for you vision
- May help prevent cancer and arthritis
- Loaded with fiber
That’s enough to convince me to eat more and more of them! This recipe is a favorite of mine and is so easy to whip together for a weekend get together, pool party, or appetizer for a dinner party.
Avocado Hummus
I love simple, easy, and delicious recipes and found this one in Giada De Laurentiis' cookbook called Giada's Feel Good Food. It's a great cookbook full of healthy, light recipes. This dip is perfect for a summer party when avocados are freshest. The combination of creamy avocado, peppery arugula, and bright lemon juice make this a winner!
Ingredients
- 1 15 oz can of cannellini beans or chickpeas
- 2 small avocados
- 1/2 cup arugula
- 2 tbsp fresh lemon juice
- 1-2 garlic cloves
- salt and pepper
- olive oil
Instructions
- Add beans, avocados, arugula, lemon juice, and garlic to a food processor and pulse until coarsely chopped. While the food processor is on, slowly add olive oil until mixture becomes smooth and consistency is what you like for a dip. You still want it to be thick but able to be dipped with a pita chip or veggie. Add salt and pepper and mix briefly. Taste to check seasoning.
