I love simple, easy, and delicious recipes and found this one in Giada De Laurentiis' cookbook called Giada's Feel Good Food. It's a great cookbook full of healthy, light recipes. This dip is perfect for a summer party when avocados are freshest. The combination of creamy avocado, peppery arugula, and bright lemon juice make this a winner!
Add beans, avocados, arugula, lemon juice, and garlic to a food processor and pulse until coarsely chopped. While the food processor is on, slowly add olive oil until mixture becomes smooth and consistency is what you like for a dip. You still want it to be thick but able to be dipped with a pita chip or veggie. Add salt and pepper and mix briefly. Taste to check seasoning.
