Simple Palmini Pasta uses palmini – a healthy pasta alternative – combined with roasted garlic, blistered cherry tomatoes, fresh basil, and grated parmesan for the MOST delicious, healthy lunch! Low carb, fat-free, and oh-so-good!Â
I recently discovered Palmini noodles and really am questioning where they have been all of my life and why I have never known about this delicious, fat-free food! If you’ve been living under a hole like me, Palmini is a noodle made out of hearts of palm that is fat-free, very low carb, and tastes JUST like pasta.  I know!! It sounds too good to be true! I just keep thinking of all the many, many pasta dishes I could’ve eaten on all those healthy eating kicks…
You can find Palmini in most grocery stores and can find all of the different noodles shapes on Amazon. These are a few of my favorite shapes to use:
Here’s how to make my Simple Palmini Pasta:
- Add a couple of rounds of olive oil to a medium skillet over medium/high heat.
- Put the whole cherry tomatoes in the pan and let them cook until they begin to blister.
- Once they have blistered, add 1 1/2 tbsp of minced garlic to the pan and stir.
- As the garlic browns, add half a can of Palmini angel hair noodles. Stir it all together to combine the flavors and coat the Palmini.
- Turn the heat down to low and add ribbons of fresh basil.
- Remove from the heat and transfer the noodles to a plate. Top with salt, pepper, and freshly grated parmesan cheese.
Simple Palmini Pasta
Ingredients
- 1 can Palmini noodles (I used angel hair)
- 1/2 container of cherry tomatoes
- 1 1/2 tbsp minced garlic
- 5-6 basil leaves, cut into strips
- 1/4 cup grated Parmesan
- 2 tbsp olive oil
- salt & pepper
Instructions
- Heat a medium skillet over medium/high heat. Add 2 tbsp of olive oil to the pan.
- Add the whole cherry tomatoes to the pan and let them cook 5-7 minutes or until blistered.
- When the tomatoes have begun to blister, add 1 1/2 tbsp of minced garlic and stir to combine.
- Add 1/2 a can of Palmini noodles to the skillet. Stir to coat the noodles in the oil and garlic.
- Turn heat to low and add the basil to the skillet.
- Remove the skillet from the heat and transfer the noodles to a plate. Top with salt, pepper, and freshly grated parmesan cheese.
