This recipe for Pasta with Chicken Sausage and Brussels Sprouts will change the way you look at Brussels Sprouts and carb-heavy pasta! I try not to make every dinner full of pasta but sometimes you’ve just gotta have it. And I’ve found a way to have my pasta without feeling like I’ve eaten 3 days worth of carbs. Are you ready to hear how?? There are actually 2 ways…..
- Fill the dish up with veggies and protein and just a minimal amount of pasta.
- Use a pasta substitute like cauliflower gnocchi instead.
No, it isn’t as fun as a huge plate of pasta (and trust & believe, I still have nights with those meals too)….but it does the trick.
My girlfriends and I made this for one of our Girls’ Night In (it’s a different version of GNO – but where you can wear yoga pants and ponytails instead of getting dressed up) and I couldn’t get enough of the dish! My friend used regular pasta but I substituted cauliflower gnocchi for my version when I made it a couple of days later (seriously….couldn’t get enough). I think I actually prefer it with the cauliflower gnocchi. Either way, its a quick and super easy dinner and will be on the table in less than 30 minutes!
Pasta with Chicken Sausage and Brussels Sprouts
Ingredients
- 1 lb chicken sausage casings removed
- 12 oz uncooked pasta OR 1 bag of frozen cauliflower gnocchi
- 2 cups shredded brussels sprouts
- 1/2 onion chopped
- 1 tsp minced garlic
- 1/4 cup grated Parmesan cheese or Pecorino Romano
- olive oil
- salt and pepper
Instructions
- If using pasta, bring a large pot of salted water to a boil. Once it is boiling, cook the pasta according to the box.
- Heat a skillet to medium/high heat and brown the sausage, breaking it apart as you cook it. Add a good pinch of salt and pepper. Once it is cooked, move sausage to separate plate.
- Once pasta is almost cooked, reserve the pasta water and drain the pasta.
- In same pan you used for chicken sausage, drizzle a couple of rounds of olive oil and add chopped onion and minced garlic. Let cook for a couple of minutes and then add the chopped brussels sprouts. Cook them for a few minutes until soft.
- Add the chicken sausage back to the pan and the cooked pasta. If you are using the cauliflower gnocchi instead, add it to the pan now. Add grated cheese to pan and 1/2 cup of the reserved pasta water (if using the gnocchi, you can just add plain water).
- Cook until everything is mixed and cooked through. Add another pinch of salt and pepper. Once plated, sprinkle with a little more grated cheese.
