If using pasta, bring a large pot of salted water to a boil. Once it is boiling, cook the pasta according to the box.
Heat a skillet to medium/high heat and brown the sausage, breaking it apart as you cook it. Add a good pinch of salt and pepper. Once it is cooked, move sausage to separate plate.
Once pasta is almost cooked, reserve the pasta water and drain the pasta.
In same pan you used for chicken sausage, drizzle a couple of rounds of olive oil and add chopped onion and minced garlic. Let cook for a couple of minutes and then add the chopped brussels sprouts. Cook them for a few minutes until soft.
Add the chicken sausage back to the pan and the cooked pasta. If you are using the cauliflower gnocchi instead, add it to the pan now. Add grated cheese to pan and 1/2 cup of the reserved pasta water (if using the gnocchi, you can just add plain water).
Cook until everything is mixed and cooked through. Add another pinch of salt and pepper. Once plated, sprinkle with a little more grated cheese.
