A one pot, 20 minute, throw-it-all-in-together meal is exactly what I need during busy school weeks. Add in the fact that everyone in the family actually LIKES this recipe and its an even bigger winner in my book!
You can make this with lots of different proteins and veggies. Throw in grilled or ground chicken or turkey with spinach, regular broccoli, or any other green. This really is one of those what-do-i-have-in-the-fridge kind of recipes.
Orecchiette with Sausage and Broccolini
A 20 minute quick, easy, and delicious dish bursting with flavor!
Ingredients
- 3 cloves of garlic, chopped
- 1/2 medium onion, chopped
- 1 lb Italian turkey sausage
- 1.5 cups broccolini, roughly chopped
- 1 cup chicken stock
- 1/2 lb orecchiette pasta (or your preference of noodle)
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup grated parmesan cheese
Instructions
- Boil water for pasta and add a good palmful of salt to the water. Once it is boiling, add the pasta and cook according to package instructions.
- While your pasta is cooking, roughly chop 3 cloves of garlic and half an onion. Add a couple of tablespoons of olive oil to a skillet on medium heat. When hot, add the garlic and onion and cook until the onion is translucent.
- Add the Italian turkey sausage to the pan with the garlic and onion and cook until no longer pink, breaking the sausage up as it cooks.
- Roughly chop the broccolini and add it to the pan.
- As it is cooking, add 1 cup of chicken stock and the red pepper flakes.
- Turn the heat down and let it simmer for a few minutes. Season with salt and pepper.
- Drain the pasta and add it back to the pasta pot. Pour the sausage and broccolini mixture over the pasta. Serve in individual bowls and add grated parmesan to the top of each bowl.
