Boil water for pasta and add a good palmful of salt to the water. Once it is boiling, add the pasta and cook according to package instructions.
While your pasta is cooking, roughly chop 3 cloves of garlic and half an onion. Add a couple of tablespoons of olive oil to a skillet on medium heat. When hot, add the garlic and onion and cook until the onion is translucent.
Add the Italian turkey sausage to the pan with the garlic and onion and cook until no longer pink, breaking the sausage up as it cooks.
Roughly chop the broccolini and add it to the pan.
As it is cooking, add 1 cup of chicken stock and the red pepper flakes.
Turn the heat down and let it simmer for a few minutes. Season with salt and pepper.
Drain the pasta and add it back to the pasta pot. Pour the sausage and broccolini mixture over the pasta. Serve in individual bowls and add grated parmesan to the top of each bowl.
