Grilled Cheese Sticks

Grilled Cheese Sticks are delicious finger foods perfect for little ones, kids’ lunchboxes, or an afternoon snack!  Simple, quick, and SO good!

My girls always loved grilled cheese sandwiches when they were growing up.  In fact, I’m pretty sure there was a year or so when all they ate was grilled cheese!  There’s something about a finger food that all kids just love!  Cut a sandwich into little squares or strips or put chicken or steak on a stick and almost every kid will eat it.

These Grilled Cheese Sticks are perfect finger foods for little hands and can be served with a side of marinara for even more flavor.   Make a big batch, store them in a resealable bag, and pull them out and heat them up when you need a quick lunch or snack.  They will quickly become a kid (and adult) favorite!!

Here’s how to make Grilled Cheese Sticks:

  • Grab the bread, mayo, a small skillet, butter, and slices of your favorite cheese.  I like the combo of cheddar and fontina for this sandwich because fontina melts so well and mixes so well with the sharpness of the cheddar.  You can use good old american cheese slices if you’d like!
  • Spread mayo on one or both sides of the bread.   Top with the cheese slices and other slice of bread.
  • Heat a small skillet (with a lid) over medium heat.  Once it is hot, add a pat of butter to the skillet and let it melt. Once it is melted, add the sandwich to the hot skillet.  Cover with the lid for just a minute or so.  Uncover and flip the sandwich over, adding another pat of butter to the skillet.  Cover again so the cheese can really melt.
  • Once it is toasted and the cheese has melted, cut the sandwich into strips and serve with a side of marinara sauce.

Ingredients

  • 4-6 slices of sandwich bread
  • 4 slices of cheddar cheese per sandwich
  • 2 slices of fontina cheese per sandwich
  • mayonnaise (optional)
  • 1 tbsp butter

Instructions

  • Lay half of your slices of bread on a counter or cutting board. Spread mayo (if using - I highly recommend) on each slice of bread.
  • Slice cheddar cheese and fontina cheese and place cheese slices on each slice of bread. Top with remaining slices of bread.
  • In a small skillet, melt a small pat of butter. Once it has melted, add the cheese sandwich to the skillet. Cover the skillet with a lid so the cheese melts faster. Flip over and cook other side. Make sure the cheese is melted all the way through the sandwich. Once the bread is toasty and the cheese is melted, transfer the sandwich to a cutting board. Let it cool slightly while you cook the other sandwiches.
  • Once all the sandwiches are cooked, take a very sharp bread knife and cut the sandwiches into strips. Add to a platter or plate.
  • Heat up a small bowl of marinara sauce and use it as a dipping sauce for the grilled cheese sticks.
  • *Note - you can make as many of these as you'd like, cut them and store them in the fridge for later. Pull out as many as you want at a time, heat them up in a toaster oven or microwave and they are ready to go!
