My Fresh Strawberry Galette is a delicious, simple dessert made with fresh strawberries, fresh basil, and store-bought puff pastry. It is a perfect summer dessert!
I’ll openly admit it – I am picky when it comes to desserts! I don’t have a sweet tooth unless you put a bag of Skittles in front of me, I never crave chocolate, and I usually want about one spoonful of ice cream before I get tired of it. I’m weird, I know! But on the rare occasion I DO want a dessert, I want something with fruit, a little sweetness, and usually served in a puff pastry. This Fresh Strawberry Galette hit all the requirements of my kind of dessert!
A galette is a French pastry similar to a pie or tart and is usually filled with fruit. Most recipes call for you to make your own dough but its summer and my girls are home and I just don’t have time for all that!! So I made my recipe easier by using a flaky store-bought puff pastry. Would it stand up to French standards?? Probably not. But it does the trick for this house!
Here’s how to make My Fresh Strawberry Galette:
- Dice up about 1-1 1/2 cups of fresh strawberries.
- Add them to a small pot on the stove over low/medium heat with 1/4 cup sugar and 3 tbsp of water. Let the mixture cook, stirring occasionally, for about 30 minutes or until it becomes thick like a jam.
- Chop another cup of strawberries, sprinkle with sugar, and set aside.
- When your strawberry jam is cooked down to the right consistency, remove it from the heat.
- Preheat oven to 375.
- Lay a piece of parchment paper on countertop. Sprinkle lightly with flour and then lay a sheet of slightly thawed puff pastry on the parchment.
- Spread a large circle of ricotta cheese into the middle of the pastry. Top it with a layer of the strawberry jam. Add the cut strawberries on top and sprinkle with fresh basil.
- Roll in all of the sides so you form a crust (kind of like a pizza crust). Transfer the parchment paper with the galette to a baking sheet.
- Bake for 25 minutes or until the pastry is perfectly browned.
- Sprinkle with powdered sugar and serve. A side of ice cream is strongly encouraged!

- 1 puff pastry sheet, slightly thawed
- 2 1/2 cups fresh strawberries, chopped
- 1/4 cup sugar
- 3 tbsp water
- 4 oz ricotta or mascarpone cheese
- fresh basil
- powdered sugar
Instructions
For the Strawberry Jam:

To assemble the galette:
- Chop another cup of strawberries, sprinkle with sugar, and set aside.
- Preheat oven to 375.
- Lay a piece of parchment paper on countertop. Sprinkle lightly with flour and then lay a sheet of slightly thawed puff pastry on the parchment. Use a rolling pin to thin the puff pastry out just a little bit.
