Firecracker Chicken: The Spicy, Saucy Superstar Meal You Didn’t Know You Needed!  Quick, super simple and SO delicious, this chicken dinner will be your new go-to for busy weeknights – or anytime you need a “fix”. 

If you’re anything like me, you also get sooo tired of the same chicken dishes over and over again!  My youngest daughter only eats chicken – no pork, beef, or seafood – so finding new chicken recipes is always a goal of mine.  And this recipe hits all the right spots – quick, so easy, and full of bold flavor that can be spiced up or prepared mild for the kids who may not want a lot of spice.

What Exactly is Firecracker Chicken?

Think crispy chicken bites tossed in a sticky, sweet, and spicy sauce that clings to every piece of chicken.  It’s the perfect mix of heat, a little sweetness, and that “can’t stop eating this” energy.  Spiced up or not, I’m certain your entire family will love the flavor this recipe brings – and if everyone in the family eats the same thing, that’s a MAJOR win to me!

How to Make It:

  1.  Chicken; Simplified:  The fastest way to cook chicken on those busy nights – dice it up and throw it in a skillet!  But first, coat the chicken in cornstarch, salt and pepper.  Then fry it up in a little oil in a skillet until its brown and crispy.
  2. The Firecracker Sauce:  Mix soy, brown sugar, sesame oil, garlic, a sprinkle of red pepper flakes and a little sriracha (if you want the heat).  It’s that perfect balance of sweet-heat!
  3. Toss & Coat: The crispy chicken soaks up all that delicious sauce.  Warning: this is when you’ll want to grab a fork and “taste test” half the pan before it ever hits the table.
  4. Serve It Up:  I like to serve this over rice with a little side of broccoli.  But if you just end up eating it all out of the pan, that’s fine too.  No judgement here!

If you end up having leftovers,  throw them in a wrap the next day with some shredded carrots, lettuce, and avocado like I did below.  Best wrap I’ve had in a long time!!

Ingredients
  

  • 3 chicken breasts, diced
  • 1/2-1 cup cornstarch
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • 1 tbsp minced ginger
  • 2 tsp minced garlic
  • 2 tbsp brown sugar
  • 1.5 tsp sriracha (leave out if you don't want the spice)
  • vegetable oil

Instructions
 

  • Dice the chicken into bite-sized pieces and put in a large bowl. Coat with 1/2 -1 cup of cornstarch, a sprinkle of salt, and a good pinch of pepper.
  • Heat a large skillet over medium heat. Add enough vegetable oil to just cover the bottom of the pan.
  • When the oil is hot, add the coated chicken and cook until browned and crispy. Remove from the pan and set aside.
  • Turn the heat down to low. In the same pan, add the rest of the ingredients for the sauce. Stir to combine all ingredients. Add the chicken back to the pan and stir to make sure all chicken is coated in sauce.
  • Serve over rice.
