Dice the chicken into bite-sized pieces and put in a large bowl. Coat with 1/2 -1 cup of cornstarch, a sprinkle of salt, and a good pinch of pepper.
Heat a large skillet over medium heat. Add enough vegetable oil to just cover the bottom of the pan.
When the oil is hot, add the coated chicken and cook until browned and crispy. Remove from the pan and set aside.
Turn the heat down to low. In the same pan, add the rest of the ingredients for the sauce. Stir to combine all ingredients. Add the chicken back to the pan and stir to make sure all chicken is coated in sauce.
