I love when my kids want to help out in the kitchen! My 11 year old daughter has gotten very interested in cooking and recently asked if she could make dinner for us one night. She found a recipe for tacos wanted to make it with crispy chicken instead of shredded chicken. We went to the store, shopped for what we needed, I helped with cutting the chicken, and she did the rest. With very little help from me, she made these delicious Crispy Chicken Tacos that I would be proud to feed any guest at my house!

While she cooked, we talked about her day, what was going on at school, and she learned some cooking tips (like how to make sure chicken is cooked through). These Crispy Chicken Tacos are a perfect recipe for older kids to try out. Have all the ingredients prepped for them and step back and see what they do!
How to make Crispy Chicken Tacos:
- Dice chicken breasts into small pieces.
- In one small bowl, add 2 eggs with a little water and stir to break the yolks. In a shallow plate, add flour, panko, and taco seasoning. Dip the chicken into the egg mixture, coat in the flour mixture, and add to a plate.
- Heat oil in a medium skillet over medium heat.
- Working in batches, cook the chicken until cooked through. Remove from the oil and drain on a paper towel. When all chicken is cooked, drizzle with a little fresh lime juice.
- Mix the slaw mixture with cilantro lime ranch dressing, salt, pepper, and a little hot sauce. Stir well.
- To assemble the tacos, fill a tortilla with crispy chicken, top it with the slaw and any other toppings you love.
Crispy Chicken Tacos
Ingredients
- 1 lb chicken breast, diced into small pieces
- 1/2 cup all purpose flour
- 1/2 cup panko
- 1 envelope of taco seasoning
- 1 pack of slaw mix
- 2-3 tbsp cilantro lime ranch dressing
- 2-3 dashes of hot sauce
- 1 lime
- 1/4 cup vegetable oil
- shredded cheese, salsa, avocado slices, sour cream
- flour tortillas
Instructions
- Cut chicken breasts into small cubes.
- In a shallow bowl, add 2 eggs and a splash of water. Stir until the yolks are broken.
- On a plate, mix together the flour, panko, and taco seasoning.
- Take small portions of the chicken, dip in the egg mixture, coat it in the flour mixture, and add to a plate.
- Heat vegetable oil in a medium skillet over medium/high heat. Working in batches, add the chicken to the hot oil and cook 3-4 minutes on each side. Transfer the cooked chicken to a paper towel to drain. Make sure all of the chicken is firm to the touch and cooked through. Once all of the chicken is cooked, drizzle with a squeeze of fresh lime juice.
- Mix together the slaw mix, 3-4 tbsp of cilantro lime ranch dressing, and a couple of dashes of hot sauce. Stir well.
- To assemble the tacos, fill a tortilla with crispy chicken, top with slaw, and any other toppings you like on a taco.
