In a shallow bowl, add 2 eggs and a splash of water. Stir until the yolks are broken.
On a plate, mix together the flour, panko, and taco seasoning.
Take small portions of the chicken, dip in the egg mixture, coat it in the flour mixture, and add to a plate.
Heat vegetable oil in a medium skillet over medium/high heat. Working in batches, add the chicken to the hot oil and cook 3-4 minutes on each side. Transfer the cooked chicken to a paper towel to drain. Make sure all of the chicken is firm to the touch and cooked through. Once all of the chicken is cooked, drizzle with a squeeze of fresh lime juice.
Mix together the slaw mix, 3-4 tbsp of cilantro lime ranch dressing, and a couple of dashes of hot sauce. Stir well.
To assemble the tacos, fill a tortilla with crispy chicken, top with slaw, and any other toppings you like on a taco.
